    Garlic confit freezes beautifully. I freeze it with some of the oil in a freezer bag. If it's laid flat while freezing, it can be broken off in chunks as needed. No need to thaw the whole bag.

    I blend them into salted butter then reform it all into a butter stick shape put em in the fridge for later

      That's call compound butter. You should try adding you favorite herbs to it also. Like rosemary, thyme, or parsley for example.

    I always have this on hand. I use it to make garlic confit mayo. I also add thyme and peppercorns to my confit.

    I made garlic confit literally the day before this video was published :D I used the olive oil... about an hour in slow cooker. It's not as carmelized but the olive oil is still very tasty and usable. There aren't any bitter notes that I could taste. Next time, I'll try your method :)

    little side note: high quality olive oil has a smoke point of roughly 410 degrees Fahrenheit so it won't be a problem to use olive oil for this!

      Nah. High Quality isn't high quality when looking after that. You can use processed olive oil with less solids. Just don't use your good and expensive extra virgin oil with so much more stuff in it that you don't want to overheat.

    Probably just a slip of the tongue, but you said you used 2 1/2 cloves to make this. Looks like you used 2 1/2 bulbs, not cloves. Cloves are the little guys. :) Looks delicious! I used the "sauce pan on the stove top" version of your roasting method(with avocado oil) and got the same results. Either way, this is an excellent way to eat garlic. Love the "to the point" simplicity of your video!

    You can also use avocado oil or high oleic acid sunflower oil if you don't mind some seed oil...

    Yes, yes, yes, thank you so much for this easy peasy recipe. I think coconut oil has a high heat level. I have olive oil but I don't like the flavor for this recipe. Not complicated. I'll tell my son too, he likes garlic. This is a recipe a young man can make too, Lol! He can surprise his fiancee for dinner. 😊. I'm going to subscribe to your food channel. 👌👍

      No butter had a low smoking point meaning it will burn

      Smoke point for butter is about 350 degrees F, probably too low. Have you considered making and using Ghee/Clarified Butter? The smoke point for Ghee or Clarified Butter is somewhere between 450 to 480 degrees F. It might be cheaper and easier to use something like Avocado oil. That is what I use for this and it's smoke point is above 500 degrees F. It is a very mild to neutral flavored oil as well.

    Hi there, love your channel. I'm a recent subscriber and I'm wondering if you can help me. I've tried this recipe today and I noticed that when I try to spread/mash the garlic it wont, because the outer layer of the clove has a very sticky firmness to it, it has the consistency of caramel that has gone too far, sticks to the knife and to my teeth. I put a thermometer in my oven to be sure and it is 120 celcius and it is, had it in for 2 hours. Thanks.

    When I make this it seems to end up being really hard. Am I maybe over cooking the garlic? Should I lower the temp?

      yes, in fact any cooking oil, even olive oil is fine. The temp of the oven is nowhere near either oil's smoking point so it really doesn't matter.

      Rewatch the video; she didn’t recommend olive oil due to the bitterness. Try Avocado oil.

      Definitely not. You want a neutral tasting oil. Canola or Olive oil will work best, probably even avocado.

    If you cut the cloves half and take out the germ, it is going to be less harmful to the stomach!

    There's no such word as "pre-heat". It makes no sense at all. Just say, "Pop it in an oven that's heated to 250 degrees..." or "Heat the oven to 350 degrees". Please, stop using "pre-heat", because it literally makes no sense.
