  • This week, we’re bringing you the latest video from a series that we call Home Coffee Brewing with April. This time around, we’re joining Henrik at home in Copenhagen to brew espresso using a very unique combination of equipment.
    We believe that innovation in coffee brewing starts at home, and that some of the most special and meaningful interactions with coffee can take place within your own kitchen.
    As we are frequently travelling visiting our international partners, we decided to introduce this format as a way to interact with you on a different level whilst maintaining the frequency of our videos.
    In this video, Henrik brews a mystery coffee using his home espresso set-up. Henrik has invested in a unique combination of a classic espresso machine with a modern grinder. His highly modified La Pavoni features a Piston Pressure Kit, Bong Isolator, Brass Boiler Pipe Connector, Custom Made Stainless Steel Sleeve Jacket, Stainless Sight-glass Cover, Group Head Temperature Strip Set, Stainless Steel Single-hole Steam Wand Tip and IMS Shower Screen.
    He combines this with a Millennium Tamper 51.6mm, Curbed Tamp Through Dosing Funner 51mm and 51.5mm Coffee Distributor. All modifications or accessories were purchased via coffee-sensor.com.
    The grinder was already very familiar to us, an Option-O Lagom P100. The coffee featured in this video was a Natural SL28 from Volcan Azul in Costa Rica.

      I say "trouble" half sincerely. I'm sure I'd have fun with it, but I'm happy getting espresso from the cafe and making drip coffee at home.

    That was very enjoyable to watch. I also use lever machines such as the Pavoni and other models to brew modern espresso. Actually, I'm also brewing the Volcàn Azul roasted by you at the moment, but the H1 hybrid and not the SL28. If you ever happen to be in Switzerland you are more than welcome for a coffee 🙌

      @@coffeewithapril At the moment I'm brewing it with an Elektra Microcasa a Leva paired with a Ceado E37sd with SSP multi-purpose burrs. Compared to Henrik I'm keeping a more traditional ratio of 1:2 or even slightly shorter, so 16 grams in and around 30-32 grams out, a much finer grind size and a longer preinfusion.

    I would go longer shot time and keep it simple. Also maybe a little David Schumer style and not have the portafilter out for such a long time to lose so much thermal heat. The La pavoni is a must for all espresso lovers. I love mine.

      Thank you for watching and sharing. Have you ever tried brewing espresso with a chilled portafilter? It's a technic often used in World Barista Championships to enhance the quality of the espresso.

      @@McCandlessDev don't have an espresso machine at home. But perhaps one day. I still enjoy drinking coffee "outside" and experience other peoples perspective on coffee brewing. Which is part of why this series is so interesting.

    Congrats on you setup, Henrik. What burrs did you go with in your P100?
    The P64 was my endgame-grinder until I saw this video - now I’m in doubt what to do😅

      Thanks 😁 I ended up going with the SSP 98mm High Uniformity, mainly because they are geared more towards being better for espresso brewing over filter, which is what a mostly brew. Although i would by no means say they are bad for brewing filter either - i'm getting fantastic cups out on both sides.
      Haha damn, sorry 😝 Did you already buy a P64? I mean it's definitely also a great grinder - initially i was also going for the P64, but ultimately ended up putting in the extra investment for the same reason as you say, it was gonna be my endgame. And after using it for the past year, i can say i have no regrets and i'm probably never gonna switch it out.

      No not yet. I have weirdly enough been afraid to reach end game too soon but I’m ready now 😅
      I have Niche Zero and it’s great in many ways but it lacks clarity and that annoys me especially when I brew limited geishas.
      SSP unimodal would fit my needs also. I brew 90 % espresso. I love the looks of the p64 so tend to choose this. Also considering import taxes.

    I also brew espresso on a La Pavoni lever machine. A lot of fun,
    Hard to get really good at. Especially with lighter roasts.

      I don't know if it's easy to do a blooming profile on the La Pavoni but lighter roasts tend to open up quite nicely with a bit of blooming.

    Which burrs were in the Option O P100?
    That is a great setup once you understand how to use the La Pavoni (although it is very finicky and it takes a while to heat everything up.).
    This is the kind of narrow coffee bench space I have, it is cool to see other people adapting to the shape of their house.
    I kind of agree with the starting point for a natural, I always end up going quite fine once I'm finally dialled in (but I can remember last year having 3 naturals which were best tasting at a coarser grind.
    The Option O grinders are fine on cold or hot starts, it's not like a weak Weber product which stalls every 5 seconds.
    I love the back and forth with working out how to get the best espresso, this is exactly like me either "mad scientist mode" or "settle"

    Does chlorides in classic TWW raise any concern when using in espresso machine? I have been using classic and espresso profiles separately it would be nice to manage only 1 profile.

      There have been a discussion about it and we know they have an "Espresso" version as well. But in our own experience the espresso machines we have tried it on. Have been working well. But always follow and respect the guidelines of the company that produced the product.
