    Very good video. Thanks.
    I picked my giant olives in November 2021 an put the in a jar with seawater and some additional sea salt until now (June 5, 2022). Today I took them out, washed them and mixed them with olive tree ashes and salted them with alot of sea salt. They are in a pottery jar and I will leave them there for about 15 days. I will add some new comment when they are ready for the sun drying.

    Kalamata olives are a specific type of olive. They are not just any black olive, that several distinct types of olives are classed as when they are fully ripe. Just salt curing a ripe olive does NOT give you cured Kalamata olives. An informative video on salt curing olives though.

    Then what? Is there enough salt lingering to preserve them? Do we need to keep them in the fridge? How long will they last?

      Coat olives w/ olive oil n spieces you like, put jar of olives in fridge.

      You need to leave them longer about four weeks total insults and as soon as you rinse off all of the salt you need to put them in oil make sure everything is submerged at that point they’ll be good for six months or even longer as long as all the olive stay under the oil

    what will we do for preservence of these olive, and do we need to keep them in fridge and just to keep the jars at room temperature ??

      you can freeze them but I put them in a jar and cover them with olive oil. I gave some of these to my ex and 8 years later he found them again and said they were fantastic! the oil, too.

    that's too much salt ma'am sorry. You can use 70 gr salt for 1 Kg olive it will be unough and you wont need to desalt them
