As a 95% vegetarian (I do eat meat but rarely) this is a place I would love to visit. If not just to get inspired for my own cooking, but I would love the experience!
Thanks for sharing this place, it's amazing to see this kind of cuisine flourishing! If you haven't heard of Ark in Copenhagen, check them out. They have an incredible vegan tasting menu and an insane non-alcoholic beverage program. We absolutely loved our meal there!
Recently visited Plates. What Kirk is doing there is incredible. The vegan croissant is such a triumph and the dessert might be the best I’ve ever had - vegan or not.

What an absolutely lovely video about such a fascinating place. Your love for the craft and plant-based high-level cooking continues to shine through. Hopefully one day, fhey drop their secrets behind their vegan cheeses one day so we can all lose our minds over it 😂💖💖💖💖
Agreed. Vegan as a term has become fairly loaded. It got a rebrand with plant based, but that often covered food that highly processed and not particularly good. Botanical cuisine sounds far better.
@@yyyy622 We went to Flores 2 weeks ago to try their Koji Greens. I have an online workshop for making vegetable charcuterie and wanted to try it to see what it's supposed to taste like when it's done by a professional 😁
@@yyyy622 I've been to Flore (may '24), and I've been to de Nieuwe Winkel in januari '23. Also been to Tribeca '22 and '21. Food at DNW was interesting and very technical, how they can get certain flavors out of their products blows my mind. However, I didn't consider it innovative in terms of the flavors in the menu itself. Also the drinks pairing let it down a bit so for me it wasn't on par with Tribeca and Flore. Tribeca is quite the opposite in cooking style. Decadent and super rich, deep flavors and gorgeous textures. Their Wine pairing is OP! And Flore... Flore just blew me away! Best restaurant I've been to. They got everything right for me. The food is very modern, super layered and intelligently created. And the wine pairing was fun and top notch.
I ate there twice! Was amazing. Their first cookbook will be released in November this year (over 400 pages). I don't know if there will be an English version

How did you find it? I recently went to Flores, which has a green Michelin star and was quite interesting.
