I made this tonight, served with rice noodles, lettuce, cucumber and carrot...so delicious! I used all of the optional ingredients other than the shallot (didn't have one in the house) and used both dried and fresh garlic. I had no annatto so I went with smoked paprika for color. The meat was 2.5 lbs of pork shoulder with the larger fat deposits removed, marinated for about seven hours. Oh my god, the smell when it's grilling...absolutely divine. Thank you so much for this recipe, I'm definitely going to be making it again! I'll also probably try the same marinade with chicken thighs. You're the best, Fish Sauce Mama! 😍

I have a portable grill and 30 lbs. of charcoal ($10 bucks on sale). This will be my first crack at this recipe. Somehow the meat from charcoal grill makes it 1000% better.

Also the restaurant I go to has as very distinct tasting/smelling rice and the dish is called "com tam" thit nuong, broken rice/char grilled pork. I want to try the latest recipe from you on the pork. Do you have any tips on how to make the broken rice perfectly like the restaurant quality rice? My rice is never as good as the restaurant. When you look at it, there doesn't seem to be anything added to it, it just had a very distinct subtle taste/smell and I can never get the rice part of it just right. Do you think they put something in the rice too for flavor ? Maybe I should get a real rice cooker? I have to figure out how they make this dish !!

Try this marinade.
Simpler and fool proof.
Marinade:
* 1 tsp chilli sauce (sriracha, chilli paste) or 1 birds eye chilli, finely chopped
* 2 cloves minced garlic
* Juice of 1 lime
* 2 tbsp fish sauce
* 1 tbsp soy sauce
* 1 1/2 tbsp brown sugar
* 1 stalk lemongrass , white part only, bruised them sliced into 1cm/0.5" pieces
