It's a great car, enough space to fit 4 adults without much effort, the manual gearbox is great, the beats sound system is awesome, not much to complain about. If I were to say one bad thing about it, it would be the low end torque, it is basically 0, you will find it quite hard to move up a sidewalk, or start moving up a really steep incline (I have the 110hp 1.0 tsi).
I have the exact same Ibiza model as tested since January this year - a DSG FR - and can confirm that in Eco mode the Ibiza will do the mid to high 60s mpg doing steady motorway driving and 50/55 most other times . Lower in the winter . This is the fifth Ibiza I have had since 2014 and can confirm them to be utterly reliable.
VW Polo also has 351liters of bootspace. My sister has this car and I have the polo. Similar car. Ibiza is more sporty and Polo a bit softer but more comfortable. No centre armrest in the front for the Ibiza. Polo optically feels more spacious inside but therefore more expensive. Personally I prefer the polo

I have a 2022 top spec Ibiza luxe but the idle is really rough. The engine rocks more than my old 2 litre 2006 diesel.
You did'nt sat in the back row seats, it would have been a good practical assessment of the size - space !
love this car, only downsides is the poor quality of the back row doors and in my Mexican version there is no wireless CarPlay or engine over 110hp
