    This bread is delicious and very soft. My two year old absolutely loves this bread and hates the store bought breads. I may have spoiled him with this!
    I make two loaves at once, and freeze them in halves. For some reason it always turns out more tender when I double the recipe.
    I'm in NC, and let it autolyse for 60 minutes, and each rise I let it sit for 60 minutes. I love this recipe!

    This was awesome. Thank you! I used active dry yeast and used a 1/4 cup of the water to proof it first. This is a well hydrated dough and I was a little worried it wasn't gonna come together, especially since I was doing it all by hand, but I kept at it and it turned out great. Thanks again!

    We used to get a certain type of loaf from Whole Foods, but then it’s quality seemed to have changed and it seems that everything that is available in grocery stores these days is bad for you of just bad quality.
    For a little while now I’ve made bread at home for the family on the weekends, and this recipe has been included in the rotation. I’ve made it a few times now and we really like it. What I like best is how simple it is and no kneading needed on the counter as the mixer does it all. For us, I use regular yeast instead of instant so it does take longer to rise, I sub out the sugar for honey, I add a just tad bit more water (needed based on our climate), and skip the egg wash (don’t want to waste eggs as I’m only making one loaf and seem to ALWAYS forget to use it for breakfast).
    Thank you for sharing the recipe and process!!

I left it to rise before I put it on the pan for a lot of time (like 3 or 4 hours) could this be the reason my bread is not firm? Hope you can answer me :) Thank you!

    • @TheRegularChef

      Glad to hear that! Haha do you mean the interior was moist/not set all the way or it was just so light and airy that it deflated? If it's the latter, then yes, it may have just risen too long. Otherwise, you may just need to bake it a bit longer

    Could this recipe be modified to make it sourdough? Longer fermentation time and compensate for the addition of starter...? Has anyone tried it? It looks delish!

    • @JustinKingma
      @JustinKingma 3 роки тому

      I love this recipe, but I haven't tried it with a natural levain, but I imagine it would probably work. I'd probably try building a 80-100% hydration levain that's using about 20% of the total flour in the recipe and see how that goes, but you'd definitely have to bulk ferment for longer and probably do some folds.

    Hello,
    RE: 'once we add the butter it will hinder the gluten development', is this also true if you use canola/veg oil instead of butter in such a recipe? - Should I be adding oil later
    in making dough? Or is this specifically a butter concern. Also is this more of a problem with whole wheat flour than regular bread flour? Thank you.

    • @TheRegularChef
      @TheRegularChef  4 роки тому +1

      Yes, it's true for other types of oils as well since the oil coats the protein strands, making it harder for gluten to form. So if you want maximum gluten development then yes, it's best to wait to add the oil until some gluten has already started to develop, and use a longer kneading time to help develop gluten even further. And as far as I know, the same principle does apply to all types of flour.

    • @TheRegularChef
      @TheRegularChef  4 роки тому +3

      You can still do it by hand! It takes a bit more work, but just mix the dough with a spoon or dough whisk, and knead by hand on a flat work surface.

    Question, any changes to the recipe if I only have active dry yeast and not instant?

    • @TheRegularChef

      Usually, to substitute active dry yeast, you'll want to use 25% more and maybe soak the yeast in water for about 10 minutes to activate it.

    Is it ok to use bread flour only?

    • @TheRegularChef
      @TheRegularChef  4 роки тому +1

      Well this recipe is designed to use a higher portion of whole wheat flour, but you could definitely modify it a bit to accommodate the bread flour. Bread flour isn't as absorbent as whole wheat, so I'd start by reducing the water content if you're only using bread flour.

      Yeah you could leave out the honey and replace it with more brown sugar, or just leave it out all together if you want the bread to be slightly less sweet.
