As a southern woman...I approve of your rub! The only thing I would have added is cinnamon. I also rub the meat with prepared mustard before adding the rub because it helps the rub stick even better, and adds another depth of flavor. I often make ribs in the oven often....when I don't have the time to babysit the smoker. A lot of times, I'll cook them until quite tender in the oven, and then throw them on the charcoal grill for a few minutes to slightly char the outside and to give them a bit of that smokey flavor we all love. If you glaze them before putting them on the grill, it'll make a sort of mock "bark" on the outside too. That is the method I use most often, and it always turns out great....you just have to be careful when grilling them after you bake them because they're so tender and juicy they'll fall right apart if you aren't gentle.

He rubs the wet mustard on the ribs before rubbing the dry rub on. So this is great to hear from two pros. Yes, I also slow roast in the oven and then quick grilling on the grill, when I don’t have time to slowly smoke in my Big Green Egg.
