Chicken and Rice Casserole - Lynn’s Recipes

- A super easy and delicious Chicken and Rice Casserole. This would make a great dinner with a green salad and vegetable.
1 cup rice, Arborio or regular white rice
2 boneless skinless chicken breasts
1 package dry onion soup mix
1 can cream of mushroom soup
¾ cup roughly chopped onion
1 package chopped mushrooms
1 package spinach
2 cups water
Salt and pepper to taste
Preheat oven to 350°. Spray a casserole dish with cooking spray and set aside.
Spread rice evenly on the bottom of the casserole. Place the chicken on top of the rice.
Add the onion, mushrooms and spinach.
Mix the mushroom soup, onion soup mix and 2 cups of water in a bowl. Season with salt and pepper to taste. Pour over the chicken mixture and cook for 1-1-1/2 hours until the chicken is cooked through and the rice is done.

My husband loves casseroles, as he grew up on them. This is a very elegant and pretty healthy casserole. I see you used healthy request soup. It's a one pot meal, with all that spinach and mushrooms. Even with the spinach cooking down so much, it still counts. You have good stuff in the dish, and one of the tastiest convenience food combos I know, is cream of mushroom soup mixed with dry onion soup mix. I can hardly wait to try this. I'm back to say I made this last night and it was so-o--o good! I used Arborio rice like you did and it was so creamy and delicious!
I have to tell you a little story. About 15 years ago I had a very serious surgery that kept me in the hospital for over a month. My friends in church and the neighborhood arraigned to bring dinner in to my husband and our 5 boys while I was hospitalized. My husband said to only bring meals in every other night so that they would be sure and use up any leftovers. Well....my husband told me that during that month EVERY SINGLE MEAL that was brought over was some version of chicken and rice! He & the boys would eat it two nights in a row (to use up the leftovers), knowing that a new meal would be coming the next night. When the new meal was dropped off...there would be another version of chicken & rice!! He was so grateful for the help, he didn't complain and was very thankful for each meal. He said he knows every way to make chicken & rice possible! Needless to say...I didn't make any version of chicken & rice for MANY years! Last night he said your recipe was really good...so that's saying something!! And yes...tonight we are having the leftovers! Thanks for this delicious recipe.
I am so happy that you all liked the casserole! I really enjoyed the creaminess of the Arborio rice, as well. Wow, 5 sons probably eat a lot. I bet you cook tons of food for your family. You probably could - I never have. You may need to watch and test the rice to see when it gets tender.

We just moved to Lakeland on Saturday. Lots to do, but maybe when we get settled I can start up doing videos again.
I made this last night and felt it was on the bland side. Next time I make it, I’ll have to doctor it up a bit. I think it would be better if I added some thyme, fresh garlic, and onion power. I think I’ll also use chicken stock instead of water.

We recently moved out of state and have been getting settled.
We miss you...this is ridiculous! Also - I cannot tell you how many times I've made that almond-crusted torte and everyone loves it. It's fine if you move (congrats!) but you can't leave us all behind :)!
