Dear Rik, you're fantastically inventive. I've no patience with yeast so I am absolutely making this. I wonder if a scattering of cornmeal on the bottom might benefit those who want more crunch? But what has my wheels turning is using this as a base for non-traditional pizzas. I'm thinking your curry sauce or thin layer of dal topped with onion and veg and spiced chickpeas or just peas for a samosa-inspired pie. Or spinach and paneer. Oooh, or mushy peas as a 'sauce' topped with other goodies. The possibilities are endless. You're really a genius in the kitchen. So happy to have found you.

Kraut, corned beef, and Russian dressing! I don't know why this crust seems like it would go better with nontraditional toppings than a regular crust but that's my sense. If there are any ideas anyone wants to share I'd love to hear them.
I’ve made these before but in a frying pan. I used a cast iron pan on a medium heat. I cooked the base on one side until brown, then turned it over and loaded the top on the hot plate. Then it was finished off in the oven for a few minutes to brown the top slightly. It means you can get the base nice and crispy if that’s how you like it, which I do. I don’t like soggy pizza. Xx
Yummo, I have made these before and they freeze very well and reheat great in the air fryer. Because I am lazy, I don't roll, my dough is looser, I oil my tray and spread the potato with my fingers the crust underneath gets nice and crispy. I don't use sauce either for the same reason. My fave is smoked chicken and spinach and of course pepperoni. Will try your recipe next time, thanks!
I remember having a gluten free quiche a number of years ago at a friends house. The base was mashed potatoes baked first with the ingredients added after the base cooled and baked again. It was really tasty.
That is absolutely amazing Rik, would never have thought to do this!! This is a great base as I always find the dough bases crisp up far too much and then they make you feel bloated. This however, is wonderfully soft and eatable!! Can't wait to make these!!!!

Just wanted to update you and fellow Rik fans... Made this tonight (but halved recipe as only me and Mr Fox) - absolutely lovely! I'm not a fan of crunchy bases to pizza and so this was right up my alley. My topping was homemade BBQ sauce, sliced onion, a decent amount of grated cheese, salami slices and a sprinkling of chilli flakes. I omitted the olive oil as it doesn't agree with me but other than that, kept to your basic principals x

When I lived in Connecticut, (with the exception of New Haven, not exactly known for pizza) I loved the potato and spinach pizza at Gino’s on Main St in East Hartford. It was a white pizza with cubed potatoes, spinach, onion, garlic, ricotta and mozzarella. Yum.
I always make extra mashed potatoes. I’m on a kick to make your soup, but yesterday’s Mexican roll ups and now the pizza. I’m going to have to make a cauldron of mashed potatoes to try every recipe!! Boil, boil, toil and make mashed potatoes!! No trouble!
One suggestion....thin sliced soft mozzarella, instead of shredded, would be amazing for a Margerite. Add basil and some sliced Romas and it's amazing!!! But really.....your pies are fantastic! I need to try this. Rik, you are "da bomb"!!

This is a really nice idea for using up leftovers! 👍 If you add finely chopped onion, parsley, dried marjoram and a 1 pinch of nutmeg to the dough shown here, you have the perfect base for a plant-based patty.
Now I can see this working with bacon sausage and egg maybe even beans, a base that lend itself to all sorts, corned beef and onion with a sour cream topping maybe 😋.

Yes please,lovely idea,I think I would be happy with cheese,and vegetables,which is the way I make my pizzas on panini bread,I use sliced tomato’s,but don’t bother with sauce.Actually to be honest I stopped using tomato sauce on the panini bread as I found it would slide off,and make a mess,but that wouldn’t happen with the potato pizza as I think it would soak in a bit.
