I brought bananas home from the store and left them in the plastic bag. I wrapped it around them and left them on the counter. After several days, with no change in color, I decided to take them out of the bag. To my surprise, the stem fell off the bananas when I started to take them out of the bag. They were almost over-ripe even though they had not changed color. They made fabulous banana muffins!
Emmy, it was definitely the ratio of the flour to the banana and the viscosity, also, is it dry where you are? Environment has a lot to do with it. You could have added a bit of milk or water and it would have been more of a pancake batter type mixture. Personally, the ones you made look divine! I love that yours are thick! Goes well with a nice, cold, glass of milk. 🧡 Thank you so much for the content! Hope the tip helps!
i tried these but added an additional 1tbs ish of brown sugar and they were delicious. i’d definitely try to add more sugar if you make them again. (my banana was also ripe so maybe that helped a bit?) i also cooked some of them as if they were pancakes; in a pan on the stove, and they were also super delicious

I think a naturally ripe banana would have made it sweeter and the batter a little more runny. I looked up the yolk ripening method and it doesn't break the down the starches quite as much as natural ripening does, so the extra starch with the flour would make a thicker batter. Looks good though. Kind of like making muffin tops!
I live in Houston Texas and our bananas literally overripe in less than 3 days. The overripe so fast that I have a freezer full of overripe bananas. lol. Thanks for the tips!
I freeze my bananas to have for things like this. Buy a big bunch, let them ripen. Then peel and cut in two pieces (for ease in getting in quart freezer bag. I get about 4 bananas in a bag. When I want to use them I take one (two pieces) out to defrost. You could zap them if in a hurry. Doesn't hurt if you are going to puree them anyway. This took all the stress of planning for needing bananas.

My Mom used to pack a banana in my metal H.R. Pufnstuf lunchbox and by the time lunchtime rolled around, my banana was ripened too much for me to eat. 😂
yeah i like them with a tiny bit of green at the tip of the peel so they arent TOO mushy and sweet. they dont really have a sourness to them at that point but they have a good texture and are still sweet but like someone said, bananas for eating and bananas for baking are VERY different, in terms of when you use them. you need them to be extremely mushy and sweet to have any strong banana flavor transfer over to a baked good. thats why banana baked goods are PERFECT to make when you forget about bananas you had sitting around. theyre too sweet and soft to eat plain, but they wont get wasted if you bake with them

Have you ever made an actual 'pan cake?' I've had a recipe for years that we make on Christmas morning that is a literal sheet pan pancake. I make the batter the night before and you put the pan in the oven as it pre-heats, then once up to temperature, you slather it in butter and pour the batter before baking. You end up with a sheet pan sized pancake about 1 inch thick that it light and fluffy.

I was gonna say to try a TBS of maple syrup in the batter since they are like pancakes. 😃
These look like they would make a quick whoopie pie... OH! Pookie Pies!! Get some buttercream or marshmallow filling in them!
Whizzer Upper is the technical term I assume. Lol

I find the simplest way to brown bananas is set them in the oven for 10 mins at 350 degrees. They are perfect to use in banana bread :)
Nice to for ripening bananas in a pinch. I think if the banana had ripened naturally the pookies would have been sweeter.

You can also bake an unpeeled banana at 300° for 30 mins to ripen it. I've done it and it works well. It even turns the peels black.
Emmy that banana is the PERFECT level to eat it. It still has a bit of sourness to it. I can't eat them when they're super sweet it's boring
Sweet is boring? How is sour not boring? Is salty also boring?
it might be perfect to eat as is but you need them super sweet when baking with them because it’s replacing some or all of the added sugar
