- We demonstrate a jerky recipe that has been in our family for several decades--quick, easy, and delicious! We have had many requests for this video and are pleased to finally bring it to you.
Products:
Magic Mill Food Dehydrator with 7 Stainless Steel
Jerky Recipe
A 3-5 pound boneless beef roast sliced thin
1 cup Worcestershire sauce
1 cup soy sauce
4 tsp black pepper
2 tsp liquid smoke
1 tsp dried onion chips
Soak meat strips in marinade overnight. Spread on dehydrator trays and process on high setting for several hours until dark and dry.

I love making jerky. It’s just my husband and I so I portion it out in seal a meal bags and throw it in the freezer. It thaws out fast.

Yes! My son and I went on a road trip and I mistakenly told him to grab whatever snacks he wanted. He went straight to the jerky section, I had to yell out " Except JERKY!" His response "I wasn't going to grab it after seeing the price."
Jerky was expensive before but now.......it's just unaffordable completely
Yes for me sometimes it’s to salty also
Not to mention all the unwanted additives and preservatives that are included with the store bought jerky.
We have been making a lot of beef jerky and our recipe is almost like yours. The only difference is we add 2 teaspoons garlic powder and 1/4 teaspoon red pepper flakes for the same amount as what you made. We backpack, ski a lot and like taking jerky with us because it's a light weight food. Works well with venison and elk too. Have done Excalibur dehydrator and a smoke house.

I just wanted to share my first experience mishap, 😔, I to wanted to have homemade jerky. To be honest, it was the biggest reason for me buying myself a dehydrator for Christmas. But I didn't heed what I was advised to do first by a family member. I was advised to run my dehydrator full of fresh bread long enough to make "breadcrumbs". It's just to remove all the "new" scent that might otherwise change the flavor of "more desired and expensive" foods into something undesirable. Still safe to eat but you won't want to!😁 I just washed my racks, liners, and inside my machine with hot soapy water. And went for it. Results: A batch of beautiful beef jerky with the weirdest taste 😳 even my dog had to think twice before eating any. So then I washed it all again and ran it full of bread until I could crumble it easily and I fed it to the chickens. Afterwards, I've been enjoying jerky ever since. Even summer faux jerky...
Sliced zucchini soaked over night in marinade (Your choice of the recipe, I'm trying Mrs Pam's next time) and dehydrate until your happy with the end product. Sorry such a long comment, just wanted to mention. Happy New Year and Dehydrating! God bless.

Always run any new appliance for a bit when new ...Toaster, dehydrator, etc..Anything with plastic or rubber parts and/or a motor.... to get that new smell out of it..
Just an FYI, this is NOT the same as store bought Jerky. Most Jerky is smoked or partially cooked then dehydrated..which actually cooks the meat a bit... this style jerky is totally different taste... It will be VERY tough and stringy and taste super salty... (I learned doing it this way first decades ago and it never tasted that good.. then a friend who was a pro at jerky laughed when I told him what I was doing and said I'm pretty much just drying out raw beef soaked in tons of liquid salt and acidity (Worcesteshire sauce) .... comes out black almost... to each his own but please let me know if you agree after your first batch.... Never made it this way again after that

This is very similar to my husband's recipe. He's been making it for close to 30 years. We also make and send it off to our kids, usually for birthdays and Christmas. One thing that he started doing for the marinade is putting it in a giant bowl. That way he can make sure each piece gets well covered. Happy new year!

Oh, Pam, I relate to you so much! When I listened to your recipe for jerky, I had to run to get my cookbook to see how close it is to the one I’ve made for years. How did we survive all of the years before the USDA imposed such strict rules on us? By the rules of today, I’d have to throw out all of my old equipment and start over, which would never happen. We worked and saved too long for them in the first place! Now, my daughters have shown an interest in putting food by so I encourage them to carefully follow the rules, and take advantage of your vast knowledge by following your channel.

My thoughts exactly. The fda would faint and die, if they saw how my mom grew up. She said they hung their meat to dry and it would get worms in the outside of the meat, she said they called them squirmies and she said you just cut that part out and cooked the rest and you would be fine. They grew up their first 20 years of so with no electricity or running water and were just fine. When people were living in caves - they didn't have the fda to run to for advice as they were cutting up their Mastadons, really !

A few years ago my SO and me went on a vacation to the States. Jerky is pretty much unknown in Continental Europe so he didn’t know it. I knew about it, having been introduced to jerky by American friends. He loved it and looked for it when we returned home. The price is so high here he almost choked.
I only just got a dehydrator and am planning to make a few small batches of beef jerky for him as a Christmas present. I’ll make sure to include your recipe!

OMGosh, I came across your vid a week ago, and I did it in my old 6 tier round stacking dehydrator. This was fantastic!! I didn't have as much meat as you did, so I only had to use 4 round trays. It turned out just like you said it would! Yay... the only thing I am going to change in your marinade recipe is the amount of pepper. It was a bit to spicy, but I've already eaten a few pieces! And.... I put mine on at 4p, got home from work, at 8p, and it was just like you said it would be!! Thank you so much. Easy, peasy, and it is my favorite snack, without the money being a factor..

I am really enjoying your channel, and love hearing the science behind the processes.... A little tip on slicing the beef is to do it while it is slightly frozen. It makes it much easier.

Good video. Thanks for sharing. I store my jerky in vacuum sealed bags in the freezer. My husband loves the black pepper recipe, similar to yours. I use the restaurant style pepper instead of ground, he likes the bite from a bigger grain (?) of pepper. Yep, he's a happy camper when there's jerky in the house. My new dehydrator, Cosori, meat setting temp is 165. Usually takes about 5-6 hours. Love your videos!

Someone gave me a dehydrator years ago and I still haven’t used it so I’ll think I definitely will try this, however, I don’t have a good set of teeth so I don’t know if I’m going to be able to chew these 😂😂😂😂👵🏻, but for long-term storage and if you’re hungry, you’ll manage and eat anything… right? I don’t think I’ve seen this commented on before, but I really admire that you recommend products, simply from the standpoint of you liking them, and not for any financial gain. We all know you are missing out on revenue or free products by doing that. And it’s very admirable. However, I don’t think any of us would care one bit if you and Jim got a few well deserved kickbacks. You are one of the few channels who does this, and I always trust your recommendations for this reason. Good goin, you!

Thanks so much for this video! We have left over roasts from last year and this is perfect timing for us! We are going to add red pepper flakes to add heat to ours 😁. By the way, I sliced mine partially frozen with a Mandolin slicer and it worked lovely!
I have my first meat sitting in the marinade waiting till morning to start the process. I'm so excited for this recipe as my husband loves jerky and this will be my first time trying to make it. :)

Pam I have made this jerky, had the butcher slice a rump roast for me. You were correct on all counts. The hardest part was covering all pieces of meat with the marinade. Girl. This is wonderful! We are really enjoying it Thank you for this recipe, it is a keeper.

Wonderful sharing again. I make jerky with no marinate as my son who takes it canoeing can't have spices/seasoning. It is always so delicious and gets eaten very quickly. I will try your recipe for the rest of the family who don't go canoeing and can have spices/seasonings!
