He puts raw chicken moussoline inside. Colours it in a pan then cooks it for just 15 mins. There is zero chance of that chicken being cooked in a joint that size.
@@kait2972 I am a chef of 20 years and now work in Environmental Health. Lamb cooks at 18 mins PER POUND at 320 F. Thats for medium rare approx 50 degrees. Chicken moussoline(in the middle) has to reach ideally 75 or atleast 60 degrees for 45 mins. The two do not match up.
@@MyScubasteve as a chef you should understand that the heat didn't have to penetrate the muscle to cook the mousse and that mousse only takes a fraction of the time to cook compare to a muscle, because its less dense and more airated.
