    watched a good 2 hours of these staff canteen videos. This gentleman shines through as a true craftsman, knows his trade and created a bangin plate. Old school with an evolving understanding.

      If you read Larousse gastronomique, there are so many techniques in there that are used that are still used today. Sous vide today is poaching in a pigs bladder back in the day for instance. Or en vessie as its called in French

    Wow, my mouth and eyes were both watering haha. What an amazing video, what an amazing dish, this chef knows what true haute cuisine means and shows it in only one dish. I'm still in awe, would love to work for a chef that has this sort of mentality.

    Amazing... Now that is what cooking is all about. Note - No espumas , No Gels , No foams , No popping whatsits , or Beetroot caviar . Just good accurate cooing and food that tastes like it`s meant to.

    what i dont understand is that the chicken mousse needs to be cooked to 165 to kill salmonella bacteria. so how is the lamb midrare? unless they are using some sort of pasturizing process that I am not aware of/ seeing here.

    Chef Williams I salute you, every dish you cook I would love too eat , one day I will, I enjoy Raymond Blanc very much too , but for me lately he is being turned too the dark side by Vegans , and too little butter and cream , still a great Chef , but Right now you are beating him into a chef’s Torque .

    Nice dish, very nice dish, but it’s not a “saddle of lamb” This is essentially a double loin of lamb. Sorry to correct head chef at the Ritz, but a saddle is “the loins and the rump”

    He puts raw chicken moussoline inside. Colours it in a pan then cooks it for just 15 mins. There is zero chance of that chicken being cooked in a joint that size.

      @@kait2972 I am a chef of 20 years and now work in Environmental Health. Lamb cooks at 18 mins PER POUND at 320 F. Thats for medium rare approx 50 degrees. Chicken moussoline(in the middle) has to reach ideally 75 or atleast 60 degrees for 45 mins. The two do not match up.

      @@MyScubasteve as a chef you should understand that the heat didn't have to penetrate the muscle to cook the mousse and that mousse only takes a fraction of the time to cook compare to a muscle, because its less dense and more airated.
