- Pavs are something that goes well with many indian as well as american dishes. However, the only concern is that these are usually made with all purpose flour.
Today in this video I am going to show the softest 100% whole wheat buns recipe that to without using Eggs and Vital gluten. And definitely without compromising its softness and lightness. These buns are fluffy and perfectly golden brown in color. Of course these are so much healthier then the traditional store bought dinner rolls.
Ingredients:
2 and 1/2 cup warm milk (1 cup- 240ml)
2 tsps active dry yeast
1 tbsp sugar
3 and 1/2 cups whole wheat pavs (1 cup- 240 ml)
1 tbs Salt
2 tbsp butter soften
4 tbsps oil

Everything was perfect, I got full round domes that forced upon through the cling wrap but my domes deflated when I brushed in milk after 1.5 hrs. :(
I tried your wheat pav Its in second proofing. In India with our weather do we need 2 hrs of second proofing. Also the you tube recipe in the description box says 1tbs salt. Since I am a regular Baker I adjusted the salt.

Proofing depends on weather u r living in.. just wait enough to rise it little more and u can bake it

@nidhicooks Why after the milk wash before baking deflat the pav. It was nice proofed and big in size. However as soon as applied milk it deflated.
Can you explain why?? And is it possible to bake it without milk wash after proofing??

If ur using all purpose flour then buns doesnt shrink after baking, however as whole wheat flour doesnt hv as much gluten as much all purpose flour it shrinks little bit after baking
To make it more fluffy, the second proofing is more important . Give it more time to proov n thn bake

Hi Nidhi. Sorry to say, i had flat buns and dough became very watery. i used half maida and half wheat flour. Dont' know what went wrong. Pls help
If u used half menda thn the water quantity will change. Try to use less water next time when u make.

Why yeast measure is different in hand kneading and stand mixture process? Here with 3.5 cup flour you mention 2 tspn yeast and in stand mixture receipe 3 cup flour you mention 1 TBLspoon yeast. Please explain.

Yes i do activate it everytime
I did it without activating it and it turned out fine. I think its unnecessary because the yeast is by definition - active

I store in air tight container in dark place
Store it in refrigerator. It stays perfectly good for months.

What was the room temperature when you made these buns? I m asking becoz to know how much rising time will be required. Here it is 31°C.
its same temperature here..bt i prefer to put it in oven with only light on, if u r nt sure check after 30 mins
What's the cup measurements.....it is good if you mention the quantity of cup in ml while using it....reason being you used two different sizes cups for milk and wheat....and you mentioned both as cups......I think if we take the same cup for milk and wheat, then obviously liquid ingredients will be more.....but detailing of the recipe was good actually.....but I find it difficult to use same sized cups that you are using...some how managed.....will tell you once i complete my cooking

I followed all the measurements but it turned out very salty.. it was soft and fluppy but really salty.. are you sure u gave ths right measurment.. dissapointed with the result
we usually add 1 tsp of salt for this recipe and its works well for us

@@Nidhicooks I just followed all the enumerated ingredients and the measurement.. it says 1tbsp so I put 1tbsp.. not really good in the kitchen so I rely mostly on utube when I cook or bake so please put the right measurement. Anyway thanks for the response I might do it again with lesser salt

1tbs of salt is too much.people usually say to use 1tsp of salt for 3cups of flour or even 0.5tsp of salt is enough.1tbs of salt is excess salt and it will be too salty and you will drop dead from high blood pressure .
