    Maybe some quick tip for cutting onions is to put them in the fridge before cutting and using sharp knives (obviously) to reduce the tears. Or at least I notice a difference between cutting warm onions and colder ones from the fridge.

      To think about it I have never tried that, its not something very important as it part of the job, but home is a different thing!

    Ha ha I started the video and paused it to get my knife and practiced slicing techniques! I am going to need this skill when I do my French Onion Soup. Going to slice LOTS of onions ha ha. This is really helpful, Chef James! In the meantime, I am going to apply what I learned here in my everyday cooking at home! Thank you so much!

    This video reminds me of Julia Child, she had to practice cutting so many onions when she started culinary school, basic cutting skills 101. This video is so helpful and informative. I'm too lazy sharpening my knives before using but this will help too.

    WOW, I wish I had seen this video sooner. I learned the culinary school method from another video but I had my onion the wrong way around the whole time & was using the back part of the knife (I'm a simple home cook not a chef), this lesson is really helpful. I've watched famous chefs like MPW and GR doing this but honestly Chef James explains it better in a way that is easy to understand for home cooks - the steam engine motion I can relate to and try and use my knife with that movement 😃

    oooooo, I really like this piston cutting technique, my issue when cutting oinions have always been my fingers slipping so i do very poor chops to avoid cutting my fingers.

    For brunoise and fine mince, I find it's easier and safer to make the horizontal cut(s) first. When slicing for onion rings, make 4 - 5 scores in the top layer instead of just one and peel off each section from tip to root. You can see James struggling when he makes just one cut. No need for a paring knife. The base of a chef's knife does the trick. James, you are the best culinary teacher I've come across online.
