Hes skilled, it happens sometimes, but there's techniques you can do with your hand to limit them greatly. Less worry, more focus, you're not weak too improve.

Having declared my dissatisfaction with this sharpener last night ua-cam.com/users/postUgkxDcr-y2Pf6xdnrFHrSP7dl9kpKaCozcSQ I thought about the problem some more. It occurred to me that I might be undoing each attempt at achieving a sharp edge by the repeated attempts. So, I tried to clean up the unsatisfactory result by honing with only positions 3 and 4.Miracle!! A really nicely sharpened chef's knife, more than enough to handle my needs. Admittedly, it did not reach professionally sharpened razor-fineness, but it is now significantly sharper than it was. A bout of breaking down carrots convinced me. So, major apologies to the manufacturer, Amazon, and all happy and potential owners! Follow the directions: don't buy it if you have ceramic blades; and don't overwork your knife blade.

Get out of here, with that pinch grip snobbery. There are vids of Gordon Ramsay not pinch gripping and even a legend like Jacques Pepin have videos of him not pinch gripping his knife, also, let's add another legend to that.....Julia Child also does not pinch grip, shocker right? Ya'll gonna sit there and say that's an improper grip? Grip the knife how it feel comfortable and stable to you. The rule of thumb has always been to get a good firm grip on the knife and let it do that work for you.

He didn’t demonstrate properly how to cut the vegetables. there are plenty of better instructions on UA-cam that show how to safely do this

@@angusmclean8991 there's a reason he says it's advanced, and as long as you're keeping the blade against your fingers and have a sharp knife you're not losing control.the reason you don't put your finger on the spine isn't because of control, it's because if you do it all the time it will cause tendinitis in your hand.
@Dosicmyth It's not advanced. It's amateur and encourages bad cutting habits. This guy can cut well and is clearly practiced, but he's nurtured a bad habit.
I've seen it happen in my 10+ years in kitchen work. Both to myself and others who were learning. When I first started out I held their knife like he does. I was told time and time again by the chef's around me and unfortunately started learning the hard way.
I don't know about tendinitis, but that's just further reasoning as to why it's bad practice to hold a knife that way.

It’s sad to watch all my friends use a knife. My dad taught me really young and said something along the lines of you’re gonna meet someone like your mom and her dad is gonna see you not know how to use a knife and hate you. Chef here! Never due third technique, that’s how you fuck up the tip of your knife. Any actual chef will tell you that, it also messes up your cutting board.

Please remember: being good at using a knife doesn't mean being fast. Only go as fast as your skill permits. I personally go slow and have very good precision

I think you forgot the most important part of the lesson. When learning new knife skills it is important to always start slow and gain speed naturally as your comfort level increases.
Honing knife cutting skill is quite satisfying! Rock and chop is definitely my go to, love it, especially with good rhythm timing in a busy kitchen and they make almost no sounds.

Mention the angle of your alternate (non-knife holding hand). Many people don’t watch the hand not holding the knife and your technique is superb ✨

Tip: Use your finger's knuckle that's just behind the nail. This will help you make precise cuts, and since all your fingers are behind the knife, the risk of any injuries has lowered.
The sharper the knife, the smoother and easier it will be.
Fun fact: When cutting food or ingredients, a dull knife is more dangerous than a sharp knife. This is because dull knives can slide and skid on what you're cutting causing it to cut you, but a sharp knife can easily slice through what you're trying to cut, only if you know how to handle it.
Life Hack: Dull knives and no knife sharpener? Grab a mug or bowl that's made from clay. Use the bottom of it to sharpen the edge of your blade.

So i might be late for this comment but the 2nd technique needs to be used with precaution. Your finger should be slightly angled away from the blade where only the middle knuckle on your finger should touch the blade. I was doing it wrong where the whole top of my finger was touching the blade and one day at work I went too high. Took a chunk out of my finger super quickly because i was chopping fast

Make sure your knuckles are curled around the thing you’re holding. Kind of like a claw.
The wide part of the blade should only touch your knuckle, preventing you from slicing your fingers off.
As long as you hold your hand that way, it won’t happen.

Hey Review this some more. I worked in the kitchen 4 years and if i had showed my mates the way you showed people here they wouldn't have fingers anymore!
Little tip from a former prep cook, try to do both of the first ones and alternate between them otherwise you are going to overstrain some of the muscles in your wrist without giving them a break
