My spider sense is signaling Sonoma will be the last MacOS to run on Intel. Based on Apples marketing specifically targeting Intel users this year its upgrade now or be left behind.
For literally 99% of people they should but the M3 Pro 16" 36GB version. Don't try to save money and go with the 18TB version. It's just not enough in 2023. If you have 10-20 safari tabs open, listen to music or play videos all while having 3-4 apps open while working on other things you will easily be into the yellow and swapping off the SSD.
Would you be able to do a video dedicated to testing the 18GB RAM in the 16" M3 Pro base model? There aren't any videos out there that have tested the RAM to see how much it can take before it starts to bottleneck. Apple have said that 18GB is enough with the M3 Pro chip but there hasn't been enough real world testing to know for sure. I would suspect that most people professionals have about 5-10 tabs pinned in there browsers and use a combination of media apps i.e Photoshop and FCPX so that could be a good place to start. I know through a few forums and reddit that people are hesitant to buy the base model because of the RAM as 36GB is really the sweet spot but out of budget for most, so you would get a lot of views from people that are looking to purchase. If I had to purchase a computer today, I would probably buy the 16" M3 Pro machine. I was considering the M3 Max 16" computer for future proofing since my current 17" Intel i7 machine is over 10 years old but the Max is too expensive!

In my normal workloads (for instance right now: GIMP with 2 projects open, Final Cut Pro open with a complex (for me) project, 2-3 safari windows with 6-10 tabs each, a bunch of finder windows, music, pages and other misc apps) I'm sitting around 12-14GB of memory at around 25-35% memory pressure. Definitely made the right choice IMO like @leisureclub said too :)
For desktop computers, M3 is still far behind Intel and AMD Ryzen. And if we want to talk about GPU performance, AMD and NVidia are light years faster than Apple Silicon when running professional software like Blender or Maya. And for gaming? Again Ryzen + NVidia is in a different league than M3.
Never buy the any 512GB macbook pro always 1TB. you basically lose -20% of its true potential lost to throttling. Look at Max Tech for all this. I would return the macbook pro and just save up for the 1TB.

I can tell you unequivacably that 18TB is too low. The 36GB version is the sweet spot.

For me, the differences, the application, Vivid, it makes the display 50% brighter so I'm getting the 16 inch MacBook Pro
