Hi, late to the party. I saw on tick tock to ask them how involved they want to be and then ask what are 3 or 4 things they really care about and ask them to be involved in that if they don't care that much about other things like flowers and colors.
Before the ceremony is easiest if you're doing a first look. Immediately after the ceremony if not. Family should be told when and where to be and that they shouldn't wander until photos are done (happens too often and cuts into other important photo time) :)
For cruises I'm willing to bet they offer in-house photographers, although I would personally be wary of that. You wouldn't be able to get to know them and you might not even know what kind of product you'd get since they might show a portfolio with all kinds of people's work. If you can budget for it, I would hire a photographer to come on the cruise with you. You'll of course have to cover their travel expenses on top of the package, but perhaps you could get them to throw in some rehearsal dinner hours :) I would be open to something like that and others might too!

Funny enough my fiance takes amazing pictures and knows what a good quality photographer looks like so his task is choosing the photographer!!
