We stayed at the Hyatt as well last year. We really liked it there! There's also a bus stop really close by, which will get you to the city in no time really cheap. But yeah, if you like it more lively, then it's definitely better to pick a hotel closer to the city centre.
As someone who has traveled for many many years to Hua Hin. Staying in all the hotels you mentioned. All very nice. There is only one hotel The Centara Grand. In my opinion by far the nicest in Hua Hin town itself.
