I love to place a big scoop of leftover rice in the bowl before adding my soup. If we added the rice to the soup, it would get "gummy" and loose it's shape. Great recipes! Did you try a cast iron wok? That has no problem heating quickly and fully on our electric stove. We got the wok on amazon and a lid at our local Chinese grocery store. Oddly, amazon doesn’t carry the lid and the Chinese grocery doesn’t carry the wok (yet has tons of lids!). We store it right on our stove top, it is quite beautiful to look at

I love making stove top rice pudding with leftover rice, white or brown using non dairy milk like flax milk, raisins, 1 egg, cinnamon and a dash of cloves, sweetened with raw sugar or maple syrup. I re cook the sweetened rice in the milk with raisins to boiling, then add it to the beaten egg and rest of ingredients. Enjoy hot or cold.

I am on KETO and I buy Konjac rice...google it. I think your recipes would work great with the Konjac rice because it a similar texture to white rice but no flavour of it’s own really...it needs to be combined with strong flavours to work! Love your channel! 🥰
I soak 1 cup of lentils for 8 hours and add 2 cups of washed basmati rice. Cook in the rice cooker. I chop half an onion and brown in a skillet add frozen mixed veggies and cook until thawed. Add mild curry powder to taste and cook together for a few minutes. Add the rice and lentils. Cook together until warm. Add more water if you want it like a congee. Add garlic and ginger if you like more spices. It’s great for potluck meals.

Cooked and cooled rice (refrigerated overnight) forms resistant starch which is very important for gut health. Potatoes and beans as well. So really it's better to eat the leftovers than to have them freshly cooked the first time.

I made the rice patties but I didn't have traditional cheese so I mixed in some cottage cheese and it's very tasty but boy did it ramp up the oil. If anyone tries it be aware of that. I always freeze rice in one cup portions. I can then fix myself a dish for breakfast. Today I added leftover peas and corn, some sautéed onion, soy sauce and sesame seeds. I try to stay away from oils, so water or broth is necessary for for reheating or sauté. I like the idea of the congee.

I thought leftover rice was a breeding ground for bacteria and was not good to keep. When I do rice I freeze what is leftover immediately.

So sorry for my late reply. Yes rice can be frozen! Stores even sell frozen rice, so you're making your DIY convenience food :).
