    I’m gluten allergic and have always wondered if there was a gluten free version of soba noodles. This is closest I’ve seen noodles to that! Making this tonight! Thank you for sharing

    Can you freeze the noodles once you’ve made them? And if so, how long do they keep?

      Yes I have frozen them, I would say frozen can be kept up to 3months? Or more?

    I don't know what I did wrong but mine fell apart into little pieces! I did everything as you said.. maybe the brand of flours I used? I tried everything!

      Did you make sure the water was boiling hot?

      @@TramNguyen-ve7ht I did! The first time it was boiling hot and as soon as they went in, they all broke apart. So I tried making it a little less hot, and they stayed together a little longer, but as soon as I poured it into the cold water bath, they did the same thing and just broke apart. 😢

      These particular noodles have only been used in soups but you can try to fry but they are quite sticky.

    if I make it thinner and longer do you think I can substitute it for ramen noodles? I have celiac disease and I can't find gluten free ramen noodles and I wanted to see if I could make it but this is the only video I came across. 😢

      You can make it thinner and longer but the texture is more softer and chewy than ramen noodles

      The red bag of rice flour is regular river flour. Green usually glutinous

      Yes you can flatten the dough with something round and cut out strips then boil it

      I don't thinks so, but I haven't tried, you can try to replace the tapioca starch with potatoe starch

      And sorry but i have another question, my uncle created a multi usage gluten free flour and it contains corn flour, rice flour, corn starch and tapioca starch so can i use this flour in ur recipe?and if so do i use 800 g of said flour?

      @@mariabousseboua1622 you can try but I am not sure as the rice floor gives a particular texture, the mixed flour that you mentioned may not work but worth a try, I usually do equal boiling water to flour ratio, try and see how the texture is, may need more water, just make sure that the texture is like playdough

      Try 1 rice flour to half tapioca flour

      Yes you can use all rice flour but the texture will be a lot less chewy, it will break up easier

      You must use hot water, it cooks up the flour as it mixes, if you use lukewarm water it comes out very sticky and hard to mold together

      Yes but you must use a wooden stick first and then use your hand when you can tolerate the heat from the boiling water
