Because the body wants to maintain a constant blood sugar level when taking in more food. -Could glucose also be turned into starch seeing as how the difference between glycogen and starch is the source? Or am I just completely confused (still working on my foundation)? In person B, the glucose is put directly into the bloodstream ie it does not need to be absorbed through the GIT, so digestion isn't stimulated and insulin will be lower? I suppose it might be secreted in response to the high blood sugar level, but maybe in lower amounts due to the lack of the digestive cascade? I haven't done this work yet so I have no idea.

I love amylase. Starch is the foundation of the human diet. A book _Catching Fire: How Cooking Made Us Human_ written from the perspective of anthropology and primatology is very entertaining. Our amylase production, compared to the other great apes, quickly ramped up to accommodate digesting cooked starches after we learned how to control fire.
