Roel, you should make bread in the tandoor, where you slap it on the inside of the oven and it sticks to bake in very little time. In Turkmenistan, where I met my wife, there are tandoors outside in every housing area where people cook some amazing things, and they are so efficient with fuel. I hope you put this piece in regular rotation in your cooking!

Please try vahchefs tandoori marinade, or Harpal Singh Sokhi`s marinade, with young chicken cut tandoori way, and 2 stage marinade, and cook it on very high heat.

That chicken looks, and sounds, amazing. What’s really selling it for me is that crispy skin! The thing is (mind you, I’ve never been to The Subcontinent, so this might just be a New York thing) but all of the tandoori chicken that I’ve ever had has been on the bone, but skinless. Were you following a traditional recipe that called for leaving the skin on, or simply following your clearly well-honed carnivorous instincts?

With traditional yogurt and spice treatment you have a healthier and tasty moist chicken. Save the butter for pastries.

They do the same in India. It's called Tandoori roti. Basically flatten the wheat dough into a thin circle and slap it inside the walls of tandoors.

Gotta find proper Indian yogurt. The yogurt in the US tends to taste too dairy/milky. Kefir may be more similar to Indian yogurt, but it is too runny.
