    I use one can, an 8 ounce package of cream cheese (softened), a table spoon of lemon zest, and 1/2 cup of lemon juice. I buy the crust. It's so good, and I'm usually a chocolate person.

    Emmy forgot to mention that you can just eat sweetened condensed milk with a spoon. I love this pie.

      I simmer/boil the cans of sweetened condensed milk for 2-3 hrs and then eat the resulting dulce de leche. :)

      Yesssss. Also you can cook it further to make Jamoncillo, which is like caramel fudge, but i can never seem to get it right when i try and my mom and nana are no longer here to give me tips, lol

    This is my younger sister, Liz's signature holiday dessert that everyone loves! She makes at least 4 each holiday, and instead of refridgerating, she puts hers in the freezer for 2 hours, then the fridge. Gives a much firmer set. One of my favorite summer sweets!

    I almost couldn’t believe it when I saw this, my grandfather died yesterday and he used to ask me to make lemon icebox pies for him. I wanted to make some of his favorite recipes to mourn him since we can’t have his funeral due to the virus, but I won’t need to go to the grocery store until next week.     Here in Brazil this is a staple dessert, for family parties, or as an every day simple dessert. It, usually, uses lime, and, sometimes, has canned cream (yes, it's also a very accessible ingredient, even more than fresh cream).

      @@hotwaterisspicy you can always put the lime in the coconut. It's not just a song;coconut milk or coconut cream with some lime and a little sugar (or brown sugar) is an excellent flavor (with or without rum).

    This pie is great especially if you love lemon curd or other lemon deserts. I made it without the crust and added sweetened macerated and mashed black berries to the top. That really helped balance the acidity and added another layer of flavor. I like to spoon this desert onto Belgian waffles. Making this desert with the these changes or add-ons made it even more amazing. I highly recommend it.

    I have a fudge recipe I made on accident recently and I think you'll love it! I call it APOCALYPSE FUDGE.
    It is a simple 4 ingredient recipe.
    All you need is hot water, sweet melting chocolate (the kind for dipped fruit) maybe a handful or two of that. The more chocolate the better. Dried powder peanut butter (I like to use PBFit but there's another brand at Big Lots). Three large tablespoons of that powder (depending on how much fudge you want it varies).
    And diced almonds.
    Mix the dry ingredients together.
    I personally use my coffee pot for just about everything but coffee because it creates hot water faster than a stove.
    Just slowly pour the hot water until it mixes the dry ingredients into a fudge mixture. Flatten the fudge in your bowl. You'll need a metal spoon because the mixture becomes very thick.
    Leave to cool until the fudge is hardened and you have perfect no fridge necessary fudge. Best on a cold night.

    One of our favorite recipes! I've also added one egg yolk and baked it for just a few minutes at 350 (like 8-10 minutes) and it is a beautiful golden yellow color and sets up quite solid when chilled. We top it with whipped cream. We also make a pineapple fluff pie from the pantry - one can of crushed pineapple with the juice, one thawed small tub of frozen whipped topping (cool whip) and one package of vanilla instant pudding. Mix that together, pour into a graham crust and chill. Fantastic for summer.

    Emmy whenever I use premade graham cracker crust I brush with about a tablespoon of melted butter and bake in the oven for 10-12 min. Try it next time.

      Amanda C. I was trying to put the melted butter on my crust and tipped the pan and it just slid out of the pan. Now I will try the other suggestion of making a lemon parfait. Lol

    My grandmother used to make what she called "key lime pie" with this recipe and lime juice. It's not traditional key lime pie (as we're from Boston and I think she used regular limes instead of key limes) but it was a great summer treat.

    Add half a block of cream cheese and it will set up more solidly in the fridge. Plus it will take a little more edge off all of the sweetness from the condensed milk.

      @@Chloroplastspectrum It freezes like ice cream. When it comes out of the freezer it has to set out a little before you cut it. We would serve it with whipped topping.

    Thank you, thank you, thank you for this! I have two cans of condensed milk that that been sitting in my cupboard. I also have a jug of lemon juice that also is randomly just been sitting in there. And in happen to have one box of graham crackers that I found at the back of my cupboard LOL so I will be making this! I love that you are doing videos trying to use up things in your pantry! Because those are the exact videos I am so looking for right now. I don’t wanna have to go to the grocery store. I am immune compromised. And I haven’t been able to get a grocery pick up time because they’ve all been taken LOL so this will be an awesome dessert this coming weekend when I make my husband supper. He unfortunately is still working six days a week during all of this. So thank you Emmy! I So very much appreciate that you are still doing videos. it keeps things normal... for me at least, during these not so normal times.

    I just made this pie earlier this week. My hubs and I each have one piece left. I do it a little different as I add cream cheese to the recipe and only one can of condensed milk. I have also seen a recipe variation that didn’t have cream cheese but cool whip folded into it. All no bake recipes. This is my favorite pie!!! My Granny made it all the time when I was growing up. Plus I love anything lemon flavored. I think the cream cheese version just adds another level of depth to tame some of the sweetness of the condensed milk and also extra creamy!!!

    Wow - as soon as I saw the title I had so many memories! My gramma used to make this. It was great for potlucks & for relatives that just show up at your door for the weekend. I remember getting all fancy with the recipe when I was about 12-13. I'd make a batch of lemon jello, cut it into chunks, and then layer graham cracker crumbs, filling, & jello. Very fancy parfait. Classy. (why yes, that was in the 70's. How ever did you guess??) Thanks for the reminder. I bet I have all the ingredients on hand...

    In Mexico we make something similar called pie de limón or Carlotta de limón it's using condensed milk,evaporated milk,and lime juice and assembled like a lasagna using Maria cookies

    My favorite pie ever! Lots of sweet memories of my dad making this pie. He would make the crust and I would help press it into a pie plate. Then he'd stir the sweetened condensed milk and lemon juice together while I licked out the milk can. Sometimes we couldn't wait until the pie was set to eat ... it would be a little runny but still just as delicious! I know it's an old fashioned recipe, but until a couple years ago it felt like NO ONE had ever heard of this recipe but it's the only lemon pie recipe I know.

    *Mum used to make a pie* with: 1 bar cream cheese, 1 tin condensed milk, 1 large lemon, 1 tsp vanilla, 1 pre-made shell (in the video). We loved it growing up. The final result was exactly the same, but I'm certain the flavour is different/better. Mind you, if your family eat this regularly, you'll become an American.

    This reminds me of the Mexican lime pie "carlota de limon" It's a little bit more involved because instead of a crust, Maria cookies are layered throughout. It's pretty fun to make and so good! :9

    Thanks Emmy! You bought back great early childhood memories of me learning how to cook with my family as a little kid. One of my childhood favorites! Peanut butter pie is another 3 ingredient favorite, except you use a chocolate graham cracker or cookie crust. Peanut butter and cool whip are the other two ingredients. Mix peanut butter and cool whip and put it in the crust to chill. So yummy. You can make it as peanut buttery as you want. I use the entire container. Awww. Early childhood cooking memories. ❤️

    I always make lemon pie with that filling recipe, with homemade crust and meringue on top of course. What i do is put the baked crust with the filling in the oven, for about 5 minutes, it helps a lot to set the filling, it becomes more solid but still creamy 🙌🏼

    here in Chile, it is standard to use condensed milk and lemon for the filling of a lemon meringue pie. To be honest, I wouldn't make it any other way

      My grandma isn't from Chile but she always topped this with meringue and called it lemon meringue pie, I loved it so much as a kid that I always wanted it instead of cake on my birthday

    My Grandma made this pie for holidays. When I was a teen. I loved it glad I found this recipe. It brings back memories. I’m going to try making a few for Thanksgivings or Christmas this year.

    With a Graham cracker crust mix 1 can of sweetened condensed milk, 2 8oz cream cheese, 1/4 cup of lemon juice and 1tsp of vanilla. Place in the fridge for an hour. No bake cheesecake that your family will love. ❤️ My mom always made this growing up. You can add Oreo's for Oreo cheesecakes. ❤️

    My Grandma used to make this a lot except instead of the graham cracker crust she used vanilla wafers. It is very yummy.

      @@MaxOakland Vinegar is basically acids pulled from fruits into water over a period of days or weeks of soaking and the water becomes tangy and sour and it also ferments like alcohol. Vinegar can be bought in bottles cheaply. Wine is made the same way.

    I made this yesterday and tried it today, it’s amazing. I used a package of Girl Scout lemonades for a crumb crust and then I used a packet of gelatin granules I bloomed and melted. It helped hold it together. I absolutely love it!

    My mom does a recipe similar to this, but she adds cream cheese. So it's a lemon cheese pie with a blueberry garniture :) It's my favourite dessert and i ask for it every year for my birthday

    This is very tasty. Another quick one is Frozen Citrus Pie. 6 0z. can of favorite frozen concentrate, pint vanilla ice cream (softened), small tub Cool Whip (softened). Blend ingredients with mixer and pour into graham cracker pie crust. Freeze. Simple as that. Made grape pie once. Sounds gross but good. Lime is my favorite, followed by using frozen pina colada mix.

    My family makes “cherry cheese pie” for holidays and stuff and it’s pretty similar to this. Cream cheese, sweetened condensed milk, lemon juice, and vanilla. When it’s set a lot of people like to put cherry pie filling on top.

      Lime would work really well, orange would probs be a better flavor, but I wonder if you'd have to do a combo of orange and lemon juice for their to be enough acid? Good idea to experiment though!

      I tried with orange juice and the flavor was very faint. And you have to eat everything on the same day, as the orange juice starts to become bitter.

    We used digestive biscuits because there're no Graham crackers in my country, and they go perfect with the lemony flavour.

    I miss putting the whole can of sweetened condensed milk in a pressure cooker for about an hour which caramelizes it, then putting it on crackers. So good. Unfortunately I don't have a pressure cooker any more.

      I've heard you can do the same in a regular pot of simmering water, just have to make sure the water always covers the can by at least an inch. I'd be wary to try it though, you don't want an exploding can of hot molten dulce de leche all over your skin, or the kitchen for that matter

      I'd think the instant pot version would be safer actually, the pressure inside would help keep the can from exploding, and even if it did, the walls of the instant pot would act as a barrier to keep it inside

      Lots of people in S. America make it in a pot of boiling (then simmering) water no problem - like u said, just make sure the top of can is covered by water - and it does take a few hours, but comes out the same.

    My aunt taught me to brush a ready-made graham cracker crust lightly with melted butter and bake it on 350 degrees for 5 minutes. Let it cool completely in the refrigerator before adding the pie filling. This really improves the flavor and texture of the crust.

    I make this but I make jello with just one cup of liquid per package ...I use complimentary juice instead of water .... in my blender I mix 1 can of coconut milk or cream.... 1 pkg of cream cheese beat together and then add the jello mix blend well. pour into piecrust and into fridge overnight...or into parfait glasses with some sort of decoration ... crushed nuts or fruit slices.... a favorite here is mango orange jello and I use mango juice instead of water. If I dont have mango fruit for the topping I just use mandarin oranges from a can rinse away the sugar and pat dry... place on top...sometimes with a sprig of mint to be fancy. I have made this for 50 years and it is still a favorite! Sometimes I use full fat condensed milk too....!

    We make these all year long! We do 1 can of Eagle brand sweetened condensed milk, 1 8 oz block of room temp cream cheese, and 1/3 cup lemon or lime juice. Topped with blueberry or cherry pie filling, it's incredible!

    as a bachelor, I make this one a lot and you can add key lime juice for a super key lime pie! While it doesn't need baking, if you bake it for 10 minutes, it sets the mixture just a liiiiittle bit more and is very thick and set and still creamy just not quite as soft. After baking for 10 min, 325, let it cool on the counter then pop in fridge for at least a couple hours and OMG is right. If you want to get really fancy buy a good can of whip cream and give it a spurt on the side of the slice.

    I have made the eagle brand lemon pie many, many times over the years. I put it into a graham cracker crust. I put one egg in it and just baked it about 10 minutes. This ensured it would set. Delicious.

    My hubby grew up on ice box pie. And he makes it every year for Christmas and thanksgiving in our house. Every one loves it. The only difference between hers and his he adds eggs. The lemon juice cooks it.

    I have a similar recipe for a lemonade pie. It’s the sweetened condensed milk, six ounces of frozen lemonade concentrate, thawed. 8 ounces of Cool Whip all mixed together and then poor into a graham cracker crust and refrigerate 4 hours or more. Very cool and creamy for hot summer days. You can also change up the flavor by using strawberry lemonade or limeade. I really like the limeade best.

    My mom made it many times, but added 3 egg yolks to the mix and used the whites to make a merinque on top, super delicious. I prefer using digestive biscuits for a crust

    Ok ok ok I had all this in my kitchen so I was like “I need something like to emotional eat all day tomorrow Soooooooo 😅I just made this. Added zest of lime. Made a crust/crumble top out ofGolden Grams and Cinnamon Toast Crunch with butter and brown sugar, baked it until it was crispy/soft crumbley. Easiest thing ever gonna do this with Key-Lime. 🍋🍈🐷🐷🐷

    I grew up eating this my dad's mom made it for him then he made it for us I loved it so much growing up. There is a fourth ingredient usually which is whipped topping. We like using that to thicken it up and make more.
