    Those look absolutely delicious and I'm going to make them soon. The only change I'll make is to toast the bun a bit in the pan. Just to get that crispy edge.

    I tried this! (Not the pickled onions... just the turkey burgers) The turkey "burgers" were amazing. I usually don't care for turkey burgers much.... often too dry and not much flavor unless you add a ton of salt and spices.
    So moist and flavorful. I might have found a new go-to.
    My mix came out on the wet side so I couldn't really form patties - no problem. I plopped a blob in the hot oiled skillet and gently mashed the blob down into a patty with a spatula. 5 min nice and brown on the 1st side and then they flipped over easily.
    For condiments, I used thinly sliced scallions and 1000 Island dressing. Yes.... more calories than plain ground turkey with the cheese, mayo, etc., but 95% turkey compared to a beef burger I feel like I'm winning a little but didn't give up flavor.

      Never tried my turkey burgers like that. I prefer two thin patties with beef 1000x more than one big patty, but I feel like I would wan’t the turkey burgers juicier, so I always do large patties.

    I made these and they were juicy and good. I eyeballed the panko and might try to get away with less next time, just because I’m trying to stay away from carbs. The red onion pickle tasted great on the burgers.

    At 6:03, you have the meat thermometer vertical, so that the tip is very close to the hot pan. If you put it in from the side, you can get the tip in the centre of the patty, and measure the internal temperature accurately.

      She gets an accurate measurement the way she's doing it because of the specific thermometer that she's using. A thermapen has the temperature probe in the very tip of the probe. So as long as the tip of the probe makes it to the middle of the burger she can pierce it anywhere she wants and get an absolutely accurate measurement.
      It's not like most conventional temperature probes where the temperatures measured partially up the probe as opposed to the very tip.

    What i s the word that Ashley used a word that sounded like "panad". She used it a 3:38 in the playback time.

      “Panade” appears to be defined as a mixture of starch and liquid added to meat to make it juicier. You can find a detailed definition if you google that term.

    This makes 3 different turkey burger recipes I've seen from CI. This one, one with whole milk ricotta added, and one with added baking soda & water, melted butter, soy sauce, and panko. I wonder which one they consider to be the best.

    Is there a recipe for the pickled onions? I can find several recipes in the archives but none that align with Ashley's recipe. Right now I am just grabbing her ingredients on the fly from the video.

      Just heat up the vinegar until boiling and pour over your onions. Let them sit for 30 minutes or so. Piece of cake

      Try 1/2 Tsp Mustard Seed, 1/2 Tsp Peppercorns, 1/4 Tsp Allspice Seeds. That looks about the proper ration, we have ours cooling now on the countertop.

      @@SammyStevens How much liquid did you use? If I got the video right, Ashley used 1/4 cup and 1 and 1/4 cup Marukan seasoned rice wine vinegar. It looks it has to be that brand for the sugar and salt. (I found some in a local high-brow grocery store.) BTW further down in the comments Ashley listed the spices as 5 allspice berries, 1/4 tsp black pepper corns and 1/4 tsp mustard seed. Let me know how yours came out.

    1- rolled oats will release fibber into the Burger better than bread crumbs
    2- granulated garlic will not only give flavour but also texture and moisture control
    3- Brine that meat! with salt and sugar just like it had when it was a living animal

    How many peppercorn, mustard seeds, & allspice seeds?
    That mixture looks delicious for pig feet, chitterlings, neckbones, & country style pork ribs.

    Isn't the usual point of a turkey burger to eat a very lean and low-fat meal? (At least it is for the people in my personal circle -- a small sample set, I admit.) If so, doesn't adding cheese and mayo defeat the purpose?

      The cheese doesn’t add many calories. The amount of mayo she used probably adds 100 calories or so per burger. It’s worth it I would say. You need that extra moisture with such a lean meat. Also, it’s still less calories than a beef burger, even if using 93/7.

    I like the recipe and looking to make them, but unlike traditional ATK recipes, the specific ingredient portions for ALL components is not communicated and the link to Get The Recipe, you have to pay for, soo you're screwed and have to estimate! Ugh.

    I absolutely love turkey burgers and have several pretty good recipes-some from ATK. I can’t mix dairy and meat in my kosher home. Do you have a suggestion to substitute the Monterey Jack?

      Hi there! I am tempted to say that you could leave out the cheese for this reason, especially since there is mayonnaise. (Do you consider mayonnaise to be dairy because of the eggs in it though?)

      @@ashleymoore8599 thanks! i know the cheese really “makes it” but no, mayonnaise has no dairy. people don’t think of eggs as meat but i tell my vegetarian friends that eggs are meat! They’re from a chicken (or any other living creature) HA! Vegan cheese is just…blech. Yea, I usually just leave the dairy out if there’s absolutely no substitute.       You can use salsa or hummus as a spread on this burger because it brings extra flavor and moisture to this burger!

      That's a bummer. You could try using vegan mayo instead. Mayo is mostly oil anyway (vegan mayo too), so I think they add it for the additional fat. There's vegan cheese too, but I've never used it.

      If it is a flavor-aversion, I promise that you won't taste it. :) If it is for other reasons, I would say a whole egg or egg yolk. Enjoy!

    Ok, food aside, which looks great, I'm wondering why you have 2 outlets right next to your pot filler that don't look to be GFCI's. Usually, outlets within 18" from water are required to be such. LOL Just want you to be safe. You make delicious looking stuff and don't want you to have issues.⚡

      I had to go back and find what you're talking about. I have never seen a water faucet near a stove like that (5:56). Idk what the code is, but maybe since it's not near a sink it got overlooked?

    I'll have to try this. Ground turkey is less expensive than beef. And quick pickles are a great idea. But I never use purple onions for anything, they are awful. I prefer yellow, or any sweet onion, and I also prefer serrano peppers over jalapeno. I am still picking some from my garden.

      Why do you hate red onions? Red and White onions are best for raw applications, Yellow and Sweet onions are best for long cooking times. My guess is you don't like red onions because you've had them cooked to mush?

      @@Dehangus Most times when you see purple onions used in a recipe on TV or on YT they are raw. I find raw purple onions extremely harsh and far too pungent for raw use. I think the only reason they show up is to add "color" to a salad or whatever. I never use them. I can eat sweet onions raw on a sandwich, and like you say, they are great for caramelizing, and I like them sauteed with mushrooms. Also good in a cucumber salad, and a quick pickle. Now, on one of Ashley's turkey burgers, I might add a thin slice of sweet onion, or a little of my serrano pepper sweet/hot sauce.

      @@geezermann7865 Well yeah, they are definitely used mostly for color. But it shouldn't be too pungent. Maybe your knife isn't sharp enough? (Crushing cell walls) Or maybe you could try rinsing them in cold water after cutting and separating to get rid of any pungency left.

    As a Type 1 Diabetic, this will no longer be allowed in my diet. I had to take 14 units of insulin for this recipe, compared to a bacon beef blue cheese burger 6 units of insulin. The Pankow and the mayo/cheese are just too many calories. Was tasty, buy I can't afford the carbs.

      Yes, for poultry to be safe to eat it is cooked all the way through to about 165F.

      Don't put mayo, cheese, or salt then, just fry up some plain patties. It's better this way, and you can decide who gets what toppings.

    Anybody know what the fat content is after adding mayo and cheese? As compared to beef? (Maybe you might as well just eat a beef burger?)

      Well cheese and mayo are normal toppings for a beef burger, so a turkey burger is definitely still lower in fat. Does that mean it's healthier though?? No. Animal fats are good so there's no reason to eat a turkey burger instead of a beef one, unless you just want to switch it up.
