I am so blown away! As a pastry chef having worked for luxury hotels globally and your follower since 2017: I am thoroughly impressed. I adore the look of your desserts. There are no words for how great this book is. Any of your savory elements or techniques can be easily added to desserts and vice versa. I love the play on flavors and textures, all while keeping true to your Danish heritage. Bravo and I know this book will do so well. Cannot wait to get my hands on one. Fabulous job🎉
I also have a history with ED and like you mentioned, it is always in the back of your mind. Even when you heal and move on. Establishing a healthy relationship with food is hard but rewarding. Thank you for speaking up. And to all the brave people in this comment section who went throug this same hell-hi and you are not alone.
I'm sure you thought of this, but one of my problems with recipes, especially small servings like this, is a recipe will call for x amount of y ingredient, and then I have so much of the ingredient left. I would LOVE LOVE LOVE an entire cookbook that tells you to buy y ingredient, and then there are recipes in the book to where that ingredient gets used up.

Congrats! You're the first person I've seen work within the space of plant-based fine dining. I think one of the misconceptions surrounding plant-based food is that it can't be indulgent or interesting, which I appreciate you illustrating that it definitely can be!

Congratulations on your new book! Also, have you read « Solitude of prime numbers »? It’s about a teenager with eating disorder. It could hit too close to home but i think you can really enjoy reading it.
I'd love to see a zero waste gourmet cook book that outlines full course meals with dishes that utilize the left overs from eachother. Like a main dish that utilizes left overs from the appetizer and so on possibly. So then instead of organizing the cook book in a traditional sense (appetizers, mains, desserts) you would just organize it by full course meals, each one completely utilizing and incorporating ingredients from one another. Hope that makes sense!
Actually the book has tons of tips on how to reuse elements from different dishes and how to combine dishes in a menu so you can reuse the ingredients, this creates a red thread throughout the menu AND reduces food waste 😍👏
