Ingredients
Wheat Bran Mix
Wheat Bran 50 g
Water 265 g
Main Dough
All of Wheat Bran Mix
Bread Flour 350 g
Sugar 60 g
Milk Powder 35 g
Salt 1 tsp
Instant Yeast 1/2 tsp
Glazing and lining
Milk, butter
I made this a couple of days ago and took part of the dough and made two buns and everything was absolutely amazing.

love this! wonder would it work to have a brioche style wheat bran loaf? you know, a "healthier" bricoche so I can eat more carbs :)
That will be a bridge too far 😀 when you started with brioche, with all its fats, a few amount of bran won't make it healthier.

Hi, love your chanel. Is there anything to replace milk powder? Maybbe whey powder or any other thechnic that baypass it because I dont find in my location... Thanks
You can get rid of the milk powder. Switch out the water used for the bran with milk. Cut short the soaking time to 1.5 hours (milk shouldn't be left outside the fridge for more than 2 hours).
I wonder if I can replace the sugar with honey or maple syrup and butter with olive oil?
Yes, you can, but you might need to adjust the hydration.

What's the brand of the wheat bran used in this recipe? Can I replace it with bogasari Taj Mahal atta whole wheat flour?
Wheat brans are pieces of wheat husk, we bought from local baker's store, no brand. You can substitute it with whole wheat flour, they are different. If you want to make a whole wheat bread, you may want to watch this video: ua-cam.com/video/FVE0zv6nam4/v-deo.html
