    I love your method, feeling the dough and learning to knead by hand. I can't get over it, so much more beautiful than just dropping everything in a stand mixer.

    I made these for the first time ever this year and they were unbelievably delicious. I didn't think I could do it. But hot cross buns MUST have nutmeg as well as cinnamon.

    Since moving overseas, hot cross buns are a rare (and overpriced) find. Considering baking them myself this year as they don't look too difficult, basically just a sweet yeast dough with fruit and spices added in. I've watched about 5 different videos on how to make them and I learned important tips from all of them. Much better than just watching a single video. These ones do look great though, and he makes them with such finesse - check out that sexy kneading!

    I am going to make these for Easter 2022, they are something I have missed that I can't find here in the middle of the USA. I miss my east coast bakeries.

      The grocery stores in my area of Texas only sell candied mixed peel during Christmastime. So I had to purchase extra last December, and freeze the peel, so that I could have some for this recipe! Turned out great. The freezing didn’t harm the product at all.

    Where I live in Andalucia they make Nazarinas. A soft sweet bun with a little glace fruit in and a marzipan cross and thick sticky glaze on top. They arent cheap. But very nice.

    I tried the recipe today and flavour of the buns was very nice except my buns were not shaped so nice and the crosses were too wide 😂. Need to practise more 😊

    Paul could or have you done croissants? If not could you? I'd like greatly appreciate it oh and tell me wth the darn dough is supposed to feel like or not feel like? I've tried and I swear I'm doing something so so very wrong because it just doesn't seem right.

    In the film Paul says flour the work top but in the method it says oil so which one is it.

    I tried hot cross buns but the dough did not double up. I used fast action dried yeast. I read that cinnamon kills yeast. So does anyone know if that is true?

      No it doesn't. But salt does. You would have to measure our your salt proportionally.

      Could be due to three things:
      1. Some people proof the yeast by adding it to slightly warmed milk first, then waiting 10 min to see if it froths a bit - then you know your yeast is still good.
      2. A poor rise could also happen if you place the yeast and salt on top of each other or next to each other in the bowl (if you choose not to combine the yeast and milk together first). Yeast and salt should be placed on opposite sides of the bowl before combining. He did it in the video but it was very fast and he didn't mention it specifically.
      3. It could also not rise if your room wasn't warm enough. I always put mine in the oven at the lowest "keep warm" setting to ensure a proper rise.

    The flavour of these with the orange is nice but needs more spice. I added more and also put it in with the flour mix instead of on the dough.
    I baked at 200 for fan oven for 20mins as per his book but they came out so over baked. I think I prefer Mary Berry's recipe.

    This may just be because I'm not very familiar with hot cross buns, but those look a tad overbaked to me. Are they? I want to try the recipe, but I don't want to underbake them thinking I know better.

      Mine came out very overbaked when I followed the advice of 200 in a fan oven for 20mins

    hot cross buns are traditionally eaten on Good Friday not Easter Day. That would be simple cake.

      @Tilly Divine you're so right! You can't eat those on Good Friday, it's a day of fasting, you eat 3 times a day and simple food, and little of it

    "Can you imagine Easter Day without hot cross buns" he asks. Actually, yes I can, because in my family at least we have always had hot cross buns on Good Friday!
    'nother celeb chef off my 'knows what he's talking about' list. Its a fairly short list by the way.

    You eat Hot Cross Buns traditionally on Good Friday. When I was a child the only day you could buy HXB was between 8am and 10am on Good Friday. All the shops would be shut except bakeries because the crucifixion of our Lord Jesus Christ was taken very seriously then. Unlike today unfortunately.

      My mum went 1 step further. Or maybe 2. She made her own buns and because Good Friday was a fast day didnt make them till the Saturday. They were delicious. She always put more mixed spice in than the recipe said.
      As she became less strict religiously, (my parents died atheists) we used to make the recipe without bothering with the cross and called them sticky buns.

    Nice example of Yeast Bread used to celebrate the 4
    positions of the sun god, and the fertility goddess Ishtar=Easter all in the
    name of “Christianity” …. on the week of Unleavened (un-yeast) bread… these buns
    will go great with the ISHTAR=EASTER HAM completing the rebellion against The
    Creators instructions on what we can consume.
    Matt.7:14 “For the gateway to eternal life is very narrow,
    the road is difficult and only a few will ever find it.”
    Get out of
    religion, and into the one everlasting covenant [Matt.5:17-20](by the one door=
    Yahushua(AKA Jesus)= YHWH(GOD) in the flesh according to Isaiah 9:6) obey the
    covenant terms to the end( see the self-=proclaimed “Apostle” Paul for what he
    is, the sower of tares(Matt.13:25)…Life is a loyalty test…remember Eve. To the
    one who Overcomes (overcomes disobedience to YHWH(God’s) Law), goes eternal
    Life with The Creator…no one will be saved by grace beloved. Hot Cross buns…just
    more lies from our fathers y’all. Be ready to meet your Maker by living out
    every word He has given us…see Deut.13 to know we are being tested in what we
    call the “NEW” testament…. Paul is that test!
