    I've never heard of using flour and water to make the cross. Here in New England we always use confectioner's sugar. Interesting difference!

      Plain flour and water is the traditional water

      I remember my mornings in Catholic school in upstate NY. Up early for Mass each day during Lent....fasting from the night before. After Mass, the nuns served up Hot Cross Buns and milk. I'm now 70 years old and live in California. No one out here has ever heard of them!

      I believe that she uses that before she bakes it and then once done, she put a glaze instead of our cofectionary sugar and milk. I've never seen it done her way either.

    I don't like the flour & water paste. In my M&S "Cooking for Special Occasions", that recipe uses narrow, thin strips of pastry and the glaze is a sugar syrup. Very glossy and delicious.

      I live in a Massachusetts. When my daughter made the traditional English recipe with the flour and water cross I wasn’t sure I would like it but the hot cross buns were as delicious as could be. The emphasis was on the delicate spice of the buns, the citron and raisins, and not the sweetness of an icing.

      I checked a recipe from an old book of mine. The hot cross buns called for shortcrust pastry to make the crosses....that's a new on for me😊
