You should visit Pelolem Beach, Goa there is forest area for watching Crab, Eagle, Bird there…July August is the right time to visit the place….We went there in July 2019…You can create atleast 2-3 episodes in that area only

For birding perspective, post October till March is good. Rest you can visit anytime considering monsoon and enjoy a peaceful time.

There are many but I have only stayed at YMCA because of it's location. You can check online and there are resorts which has bird hides as well but I don't know the exact name.
