Made.this cake a day before valentine's day. As always kurt, your recipes are always guaranteed no fail... so far i have followed your ube pavlova, ube mille crepe, red.ribbon ube overload cake and ube macapuno cake roll, funfetti cake... I made 2 batches of the strawberry chiffon because my cake pans are 9.5 inches in diameter, the assembled cake was taller but perfect all the more yummy goodness. I timed it for me. Exactly 31 minutes for my cake pans to come out of oven. The light texture of the cakes were perfect but my layers had more rise. I'm not complaining! I used Rumford double acting baking powder. Is it okay once oven reaches 340 degrees, to wait 10 minutes before putting pans in the oven? Thank you!

Hello - thanks for your comment! Glad your strawberry shortcake turned out well and that everyone enjoyed it :) For the whipped cream frosting - make sure to use very cold heavy cream when whipping to create stiff peaks. Other creams like whipping cream, evaporated milk, or Nestle all-purpose cream cannot be used as a substitute for heavy cream, as it doesn’t have a high enough fat content. Heavy cream has a higher fat content (about 35-40% fat content), which is needed for the frosting to whip into stiff peaks and remain stable at room temperature. If the cream you're using has lower than 35-40% fat, it will not form stiff peaks. So make sure you're actually using cold "heavy cream" - also called "thick cream" in some countries. And it needs to be very cold before whipping. The cream cheese in the frosting helps to stabilize it a bit, but it cannot make up for not using heavy cream. If heavy cream is not available, I’d suggest making a Swiss-meringue buttercream frosting instead, which is more stable. Hope this helps! :)

Hi Nanet - for the heavy cream, I use Organic Valley brand, 365 WholeFoods brand, or the FoodTown brand of my local grocery store here in NYC - but any brand should work, as long as it heavy cream / heavy whipping cream. It's also called "thick cream" in some parts of the world. Hope this helps! :)

For the whipped cream frosting - make sure to use very cold heavy cream when whipping to create stiff peaks. Other creams like whipping cream, evaporated milk, or Nestle all-purpose cream cannot be used as a substitute for heavy cream, as it doesn’t have a high enough fat content. Heavy cream has a higher fat content (about 35-40% fat content), which is needed for the frosting to whip into stiff peaks and remain stable at room temperature. If the cream you're using has lower than 35-40% fat, it will not form stiff peaks. So make sure you're actually using cold "heavy cream" - also called "thick cream" in some countries. And it needs to be very cold before whipping. The cream cheese in the frosting helps to stabilize it a bit, but it cannot make up for not using heavy cream.
If heavy cream is not available, I’d suggest making a Swiss-meringue buttercream frosting instead, which is more stable. Hope this helps! :)
