Mexican culture has so much heart, and it's evident in the food. Holy Moley!! I lived in San Miguel specifically for the hotsprings. Thanks for your video, another reminder of how amazing Mexico is, and how great it is to be alive.

My mouth was watering the whole time i was watching your food trip. Oh how i wish i could eat authentic mexican cuisine esp freshly-made tortillas. And i love the hot spring resort. It was beautiful (and your whole family is lovely too). Can't wait for your European trip.

Some great recommendations for our next visit to San Miguel!
Also, you guys have to visit Valle Los Senderos next time. It is a lovely private eco development with natural pools, winery, restaurant and beach club with cabanas. It’s just 10 mins outside of the Centro. Great for a fun day in nature!

The Spaniards brought corn to the Philippines from Mexico unfortunately didnt bring along with them the Mexican cuisine. It would have been nice to have taco and tortilla (as an alternative to rice) as part of our food culture so heavily influenced by Chinese and Spanish cuisine.

It's almost as easy to create tortillas at home as it is to cook rice... maybe a project for this weekend? 😀

The Spanish introduced a great many things to the Philippines and the world from Mexico. For example, corn 🌽 chayote (sayote), squash, pumpkins, tomatoes 🍅 avocados 🥑 vanilla, chocolate, achiote and turkeys 🦃 to name a few.

I really enjoyed your vlog.A big thank you for the awesome recommendations. I would like to provide some info. The cecina you mentioned in the molcajete is beef jerky. Towards the end-the dish with the mole sauce is called an enmolada. This same dish can be made with different sauces (typical fillings are cheese, shredded chicken, shredded or ground beef and shredded turkey). Enchiladas are also made with shrimp, fish and lobster). Enchiladas are also made with a red chili sauce or a green tomatillo sauce. The name of the dish will change according to the sauce. For example: enchilada (chili sauce), enmolada (mole sauce), entomatada (tomato sauce) and enfrijolada (refried bean sauce). Enfrijoladas typically have a cheese filling and are topped with crumbled queso fresco and chopped raw onions (this is a breakfast dish). Cheers 🥂

I have always been fascinated by the Spanish language, culture and food. When we were colonized by the Spaniards, the greatest influence they brought upon us was the Spanish language. They somehow influenced our food too. Even though I have never been to any Spanish speaking countries, I felt like I've been there. Thanks to you. Loved your authenticity and how detailed you describe every food that you ate. So mouth watering. Always be safe. God Bless your family.

husband speaking street food can be tricky especially buying it at night while waiting for a bus to take us back to Flida's Aunts home. Picked up
some chicken, on the bus I try to bite into a piece, hard - my wife quickly grabs it. It was the chicken head. First few years of marriage my wife would
try to trick me into eating something she liked but knew I would not. Cow tongue, small piece - looks like steak, and she won't say what part. I cut a piece,
it cut like butter, so soft. I ate one small piece and said no more. I will not eat anything from inside an animal. ( no matter how good ? _ Dennis

9:55 That thing about secondary taco is not what I would recommend, those tacos taste better with two tortillas. You should eat your taco in a way that it doesn’t fall apart. I would probably use the secondary taco concept with a taco that have a big bone in it, like chicken leg or ribs.
