I am so jealous. I have only seen someone make noodles by hand once. His ramen took more than 24 hours to make. And he was selling it for much less than the work he put in to it. I thought his ramen was too simple at first, then he explained the base for his brother took more than 20 hours and he was constantly making noodles by hand. The hand made noodles are so different.
So good to see Ai-san again! It is blistering hot right now in South Carolina, so that Higashi Chuka would be so filling and refreshing. It's lovely to see Satoshi's smiling face again, too. I missed him in the Singapore videos.

I love cold noodles!! from Chinese cold sesame noodles to Korean naengmyeon. But my fav is still Korean style kong-guksu(soy bean based) noodles! ya'll should try! Cold noodles are so underrated.

I love hiyashi chuka!!! one of my favourite summer dishes. I usually make it with a vinegar shoyu dressing, and I just need the beni shoga ginger. But these look so delicious as well. I'm getting hungry hahaha

Really enjoying this channel. Excited for my trip to Tokyo in November but worried I will miss out on some of this fabulous food as I don’t speak or read Japanese. Especially with the smaller local shops.
Ask the other diners to recommend something for you, many speak at least some English, and will enjoy showing off some local flare. This is how I've found many new favorites.
People are friendly and most speak at least some english (younger people more than older people). Ask the question of where they would eat and check out their recommendation.

I went here with my mom when we visited in January 2020 in the before times! We had ramen that I kept thinking about the whole trip. Wish I went back before we headed home.

The first 3 meals looked wonderful! I'm sure the last one which is the original had a great flavour but it looked quite plain in comparison. Not that it's a bad thing at all but I was salivating at the look of the others 🍜👍👍

That was a plate of stomach fullness..l the longer the noodle means longevity, if you eat it all by not breaking it, continue to the end.. can’t wait to get there...Japan here I come.

I had ONE type of instant cold ramen and it was very good. I wish i could find it again, the store just had it as a special here in Ottawa. I would love to learn to make the noddles by hand like that, is that going to be a video for later but videoed when you were at this shop ?
