As far as warming tortillas in a microwave and not letting back into Mexico, no doubt! I was at a deer camp last weekend and was making breakfast tacos for everybody and was warming the flour tortillas directly on the burner under the flame and they looked at me like I was crazy. Flour tortillas are supposed to be warmed under direct heat or even on a comal and served hot with a little bit of a crust. Thank you for pointing that out. I was looking at your recipe because I made 20 lb of venison chorizo that I am going to bring it as an appetizer to a party. Thanks for the recipe. Have a Merry Christmas
For those who have never tried this and are contemplating it; It is literally just like mozzarella cheese melted over pepperoni. There was no discernible difference in either taste or texture. I used regular hispanic chorizo. The chorizo releases a huge amount of oil. Keep that in mind. I ended up with a gooey oily mess. Chrizo has a bitter aftertaste. The reason that mozzarella cheese can be used in lieu of is because it is identical to the Oaxaca cheese. You can toast the tortilla on a heated dry pan as well.
@@ericktellez7632 depends on the state your from. I'm from Guanajuato and our chorizo is red and a little spicy. Toluca in the other hand has chorizo verde (green) and it comes spicy or not spicy at all.
I have a problem to execute this recipe, i live in WA state and have tried different kinds of “queso oaxaca” and none of it melts like the one in mexico. It just feels like chunks of flexible plastic ☹️☹️

I beg of you.... make this more clear to other Latin American countries.
No, tocino “ bacon “ is not Chirizo. Totally wrong statement. En Mexico we use both Chirizo and tocino each on its own purpose. I respect you art of cooking but don say things like chorizo is the Mexican bacon. It almost like saying tilapia is the American lobster.
