It's an omelet of eggs, gently fried potatoes, and olive oil-poached onions...what's not to like?? Tortilla is eaten for breakfast, lunch, dinner or as a snack, making it one of the most versatile dishes on the planet. Inspired by one of the greatest tortillas in the world, at Casa Dani in Madrid, I crafted our recipe with my friend and fellow Spaniard, Chef Nicolás López, so that you can enjoy the same flavors as we do when we go to Spain.     Best egg dishes I’ve ever had was in Spain, from the simple omelet in Barcelona to tortilla in San Sebastián. I’ve never thought that those humble dishes will be on my top list of food I’ve ever had.

    I had this yesterday at the Spanish Diner at Hudson Yards. It was exquisitely delicious. Paired with their amazing gazpacho, and gracious service, this lunch was the highlight of my day in NYC. It totally upstaged my visit to the Whitney!

    ¡Finalmente una tortilla como Dios manda! ¿Qué tipo de cebollas usáis aquí en EE.UU, Spanish, white, sweet? Siempre uso las patatas Yukon pero sigo sin encontrar la cebolla perfecta. ¡Gracias!

    Bar Nestor in San Sebastian is said to make the best tortilla in Spain. One trick learnt from them is to slice the potato in thin wedges, so that the thin ends melt whilst cooking to give a creamier tortilla whilst keeping the thick ends more solid in the finished tortilla. Otherwose as in this video.

    Casa Dani is definitely quite runny. This is more medium cooked between runny and firm. Good stuff.

    I believe he also as a tortilla recipe using salt and vinegar potato chips. I made it and it was really good!

    It is near imposible to find two identical.

    What would be a good temp for the oil while it confits?

      280 degrees to 290 degrees Fahrenheit works best. Good Luck!
