2:36 this was too funny. Chef John spends like 30 seconds explaining how the bag helps make the sides look nicer and then he spills on the sides. The “aww sonuva……..” was too good. Love you Chef John

This recipe is absolutely perfect, I've made it at least five times now. It's even good when you overcook it. I did that the first time, it tasted almost like a mousse. Absolutely heavenly. Thank you so much for this recipe!

Reminiscent of the boxed "pudding cakes" of the 1960's. My mom used to make these as a special treat for me and my siblings. Great to have a from-scratch recipe.
Q: Chef John, or anybody: why is it necessary to refrigerate the batter before baking? Just curious. Thanks.

Love this recipe. I do the same thing with chocolate souffle(leave the inside a lil under-cooked. It's the best. And, when you refrigerate it, it is like amazing cold fudge. Dumping heavy cream on it, tones down that dark chocolate bite, if you prefer milk chocolate. Chef John is the man!

I call it chocolate pudding cake. I’ve made it for years, but you can’t tell. Because I’m barely 100lbs. So it’s not fattening at all 😜 I also use a good strong coffee to pour over it, and the cake soaks up all the coffee to make extra extra pudding. I will try it your way also.

Ramekins are not a must. I used a Chinese tea cup that was oven safe. If you don't have anything small, just use any oven safe bowl. If it's big, just reduce the baking time.
Do butter the bottom of you baking dish extra...The sides you can cut :P

hammyarr, you can separate the egg yolks and the egg whites around it and use only the yolks. Just split the egg in half while tilting the egg upwards over a bowl so that you will retain the yolk and the whites will slide down the sides. You can pour the remaing yolk and white into the other half, tilting it up of of course and go back and forth until very little white remains. Use the remaining whites for something else or discard. Use the seperated yolks with 2 more unseparated eggs.
