James always just adds a "shake" :D It drives me insane but he doesn't seem to measure things..... Then again, yeast multiply so I doubt it really matters how much you put it - he thinks a teaspoon per gallon would do the job! Baking yeast will work but may have a slightly "bready" flavour? Alexandra Abraham - I made a hard cider with bread yeast instead of wine yeast as an experiment a year or so ago. Neither myself or a buddy liked it, but his wife absolutely loved it; I gave her the whole batch and she drank it in short order. I assume that people sterilise their own equipment, I know I do before I use any. I am not here to hold hands and inform people how to wash their hands. Maybe you would like a step by step guide, but, you will have to google that as I am not your mommy. As for mashing bananas - well, that is silly. Don't you know that by mashing the bananas you release a lot of protein starch, which, in turn will add a protein haze to your wine - thus making a far inferior wine. I am sure that anyone, even those that need to google how to wash their hands would know that! Shall I pass you the milk and see if you can make a bowl of breakfast cereal?
I think this wine would also be a good option for the cocoa nibs, sounds fabulous.

It's not really possible to as far as I know. There's such thing as using wild yeast. Fruit skins especially grapes and raisins tend to have them
