    Greetings all the way from Malaysia, so impressed with the way you use tonka, can’t wait to infuse in vodka, first time doing this, any particular grade of vodka I should be using. TIA , totally excited.

    Thanks for giving me some ideas. I first heard of tonka beans via my interest in fragrance as it seems to be a common ingredient in many mens fragrances. When I saw a gourmet food supplier selling them I decided to buy a small amount so I could experience their scent and maybe cook something with them. I was thinking of a panna cotta, creme brûlée or some type of custard based dish. This video has been useful for expanding my options of what to do with them. In terms of quantities to use in the recipe, is one bean roughly equivalent to using a vanilla pod?

      I don't measure vanilla either so I just add until it tastes good. One tonka will go a long ways.

    Interestingly. One tsp of cassia cinnamon has more Coumarin than is considered safe but it would take thirty tonka beans to be unsafe.

    Very educational presentation. What about the "fleshy" part of the fruit? What nutrition there? ALSO in Trinidad and Tobago the children shave the outsidw part and make an authentic Indian head and other heads. QUITE CREATIVE uses there.

      I thought the children just made dolls with it. I am afro Trinidadian and we made dolls and I learnt it from my mom who got it from her mom. I think its a Trini thing overall.

    I make candies, can I just grate the beans directly into the sugar syrup during cooking? I will heat the sugar until around 250C

      Probably yes but then your sugar will be gritty. Better to make yourself a jar of tonka sugar as I've shown, then sift that sugar into the syrup.

    Do you keep the extract in the fridge or just the pantry? How small do you crush the beans that you put in the vodka? Like in half or even finer?

      Just crush it with a mortar and pestle. The flavour is really strong so do you don’t need to go fine and then I just store it at room temp.

    Which vodka are you using? 40 degrees? Jow many beans for 1 cup of vodka?

      I honestly use the cheapest vodka I can find and I’ve never measured how many beans go into each cup. Let’s say 2-3 beans. Something like that.

      I never measured it. I'd roughly guess 250mL vodka to 5 tonka beans.

      I grind 4 beans into 250mL of vodka.

      @@kostaspatra13 grind them. let them infuse your vodka for about 10 days or so and then filter them out. You can leave them for longer if you're patient.

    I used to sell Tonka beans on my Etsy shop but they banned it☹️
