Well I went back and tested this, and it did work, but not consistently. At times, the stalactites still stunned me with the shield, but the shield did cut down the number of times that happened. Having this trick be mentioned or hinted at by the game would have been nice, though. I finally managed to beat the level again, so that's all that matters. Thank you, kind viewer. :)
I did some more digging and found reddit bionicle game facts, including an interview with a dev. Not only were levels cut, but also huge story cutscenes and boss fights. The Bohrok and Bohrok Kal were going to have more boss fights. Each Toa Mata would fight 1 Bohrok at the end of each stage, and each collect a Krana mask, which leads to them becoming the Toa Nuva. Its why after only Kopaka and Tahu defeat all the Bohrok and only collect two kranna masks, the game just shows them having all 6 and instantly becoming the nuva. Cause all of the Bohrok arc was cut. The Bohrok Kal would be fought two on one against Gali, Lewa, and Pohatu. This was all entirely cut. The Rahkshi would also be fought two on one against Onua, Kopaka, and Tahu (Tahu's level actually had you be on foot first and fight two Rahkshi, but the white one would flee after the Black one gets beaten, leading to the surfboard level we play in the final game). Taka Nuva's level was supposed to be much longer. First was a vehicle segment like Kopaka and Tahu Nuva where you ride his bike to get to Makuta's lair. Then you were going to storm the lair and Taka Nuva would single handedly fight through hordes of Makuta's minions, and end the segment by destroying the Rahkshi tubes where Makuta was making them. Then the final boss with Makuta would play out, which was the only segment of the level that was in the official release. Heck, you can even ACCESS KOPAKA'S CUT ON FOOT SEGMENT. If you mash the shield and jump button during the first cutscene of the level, it will retract Kopaka's sled and he will be on foot and you can run around with him. You can attack, jump, shield. All his on foot animations are still in the game. Also, wanna know an easy trick to the Tahu surf level? Shoot the Rahkshi RIGHT BEFORE you pass the piston machinery. The Rahkshi will slow down and you will pass him as he is crushed under the piston. You will get so far ahead, the Rahkshi will not be able to catch up anymore

You clearly put effort into the videos you make (I watched the SSMB Ultimate and Aggretsuko reviews), so it is a shame that they haven’t garnered much attention.
You do know you could use your shield as battering ram to break through the stagnant.

I don't think the game is that bad. I own the PlayStation 2 and GameCube versions.
