      The calamansi coffee makes sense since orange coffee and tonic coffee is becoming more popular also in the Philippines. But I have only seen very few cafés that offer calamansi coffee. Will definitely add this to my popup cafe menu.

    Aussie here- that was almost a flat white but not quite. You never spoon foam on top. You need the microfoam which comes from the bottom of the milk jug. Most places use a spoon in the spout of the jug to stop the foam from going in to the cup. The "foam" on top is the crema that has mixed with the microfoam. Esspresso is the most common coffee in Australian cafes, the Italian immigrants in the 30s-40s opened cafes all over Australia and brought espresso machines with them.

    The only Swedish coffee I can think of is "Kaffegök" (Coffee cuckoo, yes, as in the bird).
    You need strong coffee, a silvery coin, and vodka. Put the coin in the cup, pour coffe over it until you can't see the coin. Then pour vodka into the coffe until you can see it again.
    That's "Kaffegök!"

      Why would you put a coin in the drink? That is unsanitary and unnecessary. Also black coffee without sweeteners tastes nasty and so does vodka. Putting them together sounds vile. If you actually watched this episode, you'd know that even Beryl wouldn't like it (she kept saying how much she likes coffee to be sweet). She'd still try it, though, because she's nice like that.

      Do you keep a special coin just for coffee? Do you put a separate coin in each cup? I am so intrigued. And I don't even drink alcohol, so I wouldn't be making this, I'm just intrigued by the idea of using a coin as a measuring implement.

    As someone from Italy, another drink recipe for the mint syrup is to mix it into a glass of cold milk and dip chocolate biscotti into it. The best!!

      Hello Beryl, hello World ! Sirops Monin is one of the renowned brands of sirup in France. Any nice café or bar would serve this over any other brand. They have such a wild range of flavours, including nuts, such as pistachio, flowers such as violet or poppy or lavender, spices like cinnamon or vanilla, chocolates and caramel flavored sirups as well, they also have mocktail sirups such as virgin morito.
      They have cocktail ideas on their website but they will all require you to use another of their products, what a bummer...
      I’m no cocktail drinker so I can’t give you fancy recipes but here are the three ways we would have mint sirup as kids :
      - with water (Menthe à l’eau)
      - with milk (Bébé vert)
      - with lemon soda (Diabolo Menthe)
      You can put any of these in ice pop molds in your freezer for a Summer treat.

    FYI: it looks like you have a Sage/Breville barista express with a automatic steam wand. The steam wand isn't designed to be used in the traditional format hence why it was hard to use. The barista is meant place the jug under the steam wand, pull the steam wand down, and allow the steam wand to do all the work. The jug should be sitting on the deck of the espresso machine and not held. There should also be a bunch of setting to alter the thickness of the resulting milk. Hope this helps.

    If you want some tips on milk frothing - keep the wand mostly submerged, and hold the jug so the milk spins around. Hold your other hand on the side of the jug and when you start to feel a hot sensation in your hand turn it off. At this point you can manually swirl the milk in the jug for a bit, bang out any large bubbles and then pour 😊

      Keep the jug still when you’re frothing and turn the wand off before removing the jug

    Ex-barista here, a few bits of input!
    At Starbucks you can ABSOLUTELY order a coffee lemonade, it's a drink I used to make for myself (literally just espresso shots added to lemonade). It's not carbonated, but it's nice! For anyone with doubts about the combo, think like a lemon iced tea but with bolder, roastier flavor from coffee.
    If you want something easy too you can just add tonic to espresso with or without a squeeze of citrus. The little extra bitter kick from tonic is delicious.

      Back when I worked at Subway my lactose intolerant workaround for coffee was to make it an iced coffee and add the minute made cranberry juice. Never had it with lemonade but I once found a canned version at the grocery store that was sparkling yuzu and coffee. Better than it sounds, for sure

    For the ones who don't drink coffee, a few years ago, in Hanoi, I found places that were serving cacao trung ( egg hot chocolate). Delicious too...

    Its great you highlighted Egg Coffee. People get all grossed out cause of "egg" when I mention it to people.
    small critique: Phins actually produce a coffee that is bit different from just a normal pour over. It's stronger in taste. Also using robusta coffee instead of Arabica coffee makes a big difference.

    In France, people add a bit of that Monin green mint syrup into sparkling or even flat water for a refreshing summer beverage. I like to use natural peach syrup, but the mint is lovely.😋😋😋

    Extremely exited by citrus coffee. When I started grad school there was a coffee shop near campus that served lemonade with espresso in it. Those got me through a lot of final projects before the university bought the building and replaced it with a starbucks. Very pro citrus coffee. I will make this.

    As someone who makes a LOT of simple syrup, if you add some citrus to the process during cooking, it will prevent the sugar from crystalizing.

      Yes, it does. But then you can’t use it for milk based drinks or even those with a little milk. The milk will split.

      @@hemagoel3034 If you add it to a hot milk drink than that may be more likely to happen. I usually make iced drinks, and always have brown sugar simple syrup on hand. I made iced milk tea w brown sugar boba and that was not an issue.

    As Russian I will always remember our coffee culture we made up in the 2000s and 10s. Two very significant drinks- Raf Coffee and Bumble. Raf is basically a dessert coffee with cream and vanilla sugar and syrups - foamy heavenly goodness. And bumble is a summer drink iced coffee with orange juice and maybe sometimes syrup. Although I ve seen variations of bumble all over the world now (in Philippines definitely for example) Raf is still a very post Soviet countries drink.

    The Cuban cafecito is identical to the foamy coffee they make in Napoli, Italy. When I was there people just called it "caffè con la cremina" (coffee with a little foam), I don't know if it has a more specific name.
    Now off I go to buy sparkling water to make the Philipino Citrus coffee, it looks delicious

    When I was a kid my Spanish mother would make me hot milk with egg yolk and sugar. So first you add egg yolk to a glass, then sugar, mix it with a spoon, and then you boil milk and pour the milk into the glass. Mix again with a spoon. It was yummy and I still make it time to time. Interesting how in Vietnam instead of pouring hot milk they pour coffee. I'll have to try it now!

    You should try next,:
    Kaffeost which is a northern scandinavian coffee made with leipäjuusto, or rather, squeaky finnish cheese made from reindeer milk. (may be called bread cheese also, though in the US or such it may be that you find cow milk varieties instead) You place the cheese in the bottom of your mug (traditionally it is served in a gorgeous birch carved mug but obviously for ease a regular mug will do) and like bread would, the cheese soaks up the coffee in a sponge-like way. It sounds absolutely absurd, but leipäjuusto is a sweet-ish tasting cheese, and when warmed and soaking up the coffee, its almost like marshmallows in a hot chocolate, only with coffee instead. I tried it when I was in the far north of Finland visiting my in-laws out there (wife's finnish) and I was disgusted at first but it's actually pretty good. Just make sure to enjoy it hot!
    But in the summer months, Algerian Mazagran can be refreshing, it's coffee with lemon juice and mint, often sweetened with rum. ;) (might be similar to the filipino citrus coffee?) , it's so refreshing, and I never realised citrus would work in a coffee, I figured it would all be too acidic to mix together, but it's so damn good and refreshing on a hot day.
    And one that is related to my own heritage: Marghilomana Coffee from Romania. In romania, turkish coffee is pretty much considered a traditional style of romanian coffee also. anyway, the story is that a king named charles (not sure which one) visited Romania and asked for coffee, but the fresh water had not arrived via the carriage yet, so Marghiloman brewed the coffee with rum (or brandy, it differs), Charles liked it and named it after its rightful "creator" to make it is pretty simple: simmer 100ml of brandy or rum with 2 teaspoons of sugar, then whilst it is boiling, add your 3 teaspoons of turkish coffee, then let it rest for roughly 3-5 minutes (put a plate on top to keep the heat) and then it's ready to serve.
    my other heritage is Irish, but of course, I feel like Irish coffee is very well known!

    Just as someone who is going to be in apartments with smaller kitchens, phins are small so they don't take up much space, and they don't require buying > storing > throwing away paper filters, they're super simple to use, and the coffee is strong and good. And I love that a couple of phins and my coffee grinder all take up less space than a coffee machine, and the phins are definitely more sturdy than most pour over sets (which is important when I haven't had coffee yet that morning).

    yeh you made a cappuccino not a flat white, the flat white is called that cause it barely has any foam. foam the milk less and use a spoon or spatula to hold the foam back

    My husband and I accidentally discovered citrus coffee, we had espresso shot and my husband just for fun dumped orange juice in it. and we thought it would taste meh.. or just average. We didn't know our world was about to change!

    Beryl you should also try Kapeng Bigas (literally means Rice Coffee) from the Philippines. It is roasted rice grains, finely ground and made into coffee. It works best with condensed milk.
    It tastes similar to the crusty and toasted rice at the bottom of your pan when you steam rice and overcook it.

Really surprising to see that same brand of coffee from someone who's from Hawaii/Cuba❤

    Coffee!!!! LOVE IT!! I love coffee so much I search out recipes on Pinterest. I tried the Vietnamese coffee on a whim one day and was delighted! try it. I tried the citrus coffee too, but I found I did not like it with lemon but loved it with orange! Now I must try the others.

      It really depends on the coffee. You don't want a bright, citrucy single origin arabica for this. The acids are going to clash with each other. You want a blend. Washed coffees with traditional South American varietals are a safe bet. Something labeled "espresso" or "cold brew". A good robusta, if you come across it. Anything you already like that's on chocolaty/heavier body end.

    I live and Iced Americano too! My favorite. Gonna try the citrus coffee as I love seltzer water all year. I drink it iced with lime or lemon juice and a touch of agave syrup Also a cup of hot chocolate with peppermint schnapps is great on a cold day and we call it a Snow Shoe ⛄️❄️

    This is such a great episode! There's another South Indian coffee known as chukku kaapi - it has coffee, pepper, jaggery, and ginger powder and is really good.

    As a french girl, seeing you discover the mint syrup is quite fun and astonishing ! I grew up with those syrup (the most common are mint and "grenadine"). We drink them just with water and ice or you can mix them with fizzy lemonade to make a "diabolo" !

      Sirop de Menthe = France to me - it was my favourite new "discovery" when I first travelled to France as a small child.
      I have strong memories of a brand which came in a striped metal can.

    You should try Coke Black aka Classic Coke with black coffee. It's a little less coffee to Coke about 40/60 mix and it is delicious.

    You might benefit from trying James Hoffman's technique for your Moka pot. TL;dw: jump-start it by pouring boiling water in the bottom, seal it all up and go.

    Fruity coffee actually an option when you want summery drink but also need that caffeine kick. My favorite is grapefruit espresso, but strawberry (syrup with puree) espresso is also a delight.

    The Egg Coffee is basically a Zabaglione with coffee which I intend to make.
    The Pedrocchi Coffee (or however it is spelled) gives me ideas. Whipping it with heavy cream is close yo ice cream. If you beat heavy cream with condensed milk, add the mint liquor, and chocolate chips before freezing, you will pretty much get mint chocolate chip semifreddo.

    In France the mint syrup is a classic! In cafés you can order "Diabolo menthe" which is mint syrup with limonade (like seven-up) or Perrier menthe if you want it less sweet!
