  • Ghana Jollof Rice | Rice cooked in a delicious blend of tomatoes, carrots and bell pepper.
    ingredients
    3 cups of rice
    4 carrots
    1/2 bell pepper
    2 onions
    5 cloves of garlic
    2 gingers
    chili
    2 tbsp of salt
    corned beef
    olive oil
    2 cans of diced tomatoes
    1/2 bottle of tomato paste
    3 bay leaves
    1 tbsp of all-purpose seasoning
    1/2 tsp of rosemary
    1 tsp of nutmeg
    2 cubes of beef magi
    1 tbsp of ghana curry

    Ok so meat wasnt cooked. That's something new i hv seen today. But personally the stock from cooked meat add lots of goodness to jollof. Tnx for sharing

      I use both strategies. I cook the meat sometimes and use stock. . Thank you for sharing your ideas

    Sister do you know any Ghanaian/West African restaurants or takeaway in Brisbane? I always hear about jollof rice but never tasted it

      Naa. My rice is clean. There was no need to wash it.
      But you have to use it if you want to

    Please, don't you wash to wash or rinse the rice before adding to the stew? Since all these cereals go through a process before reaching the consumers.

      Mia Ballot . If am using it for jollof or stew, I do not cook it but just put spices. If, am eating the meat separately, I do cook it before frying it. Hope it’s clear 😄😄😄

      I wanted the seasoning straight in the oil. But you can still cook it because I do it sometimes 😁
