The big white bars are actually called the 'Aiming Point', usually 1,000 feet from the 'Threshold Markings', your piano keys. The Aiming Point also aligns with the red and white VASI or PAPI lights and is used as the "Touchdown Zone" by most pilots, commercial and private.
The wind sock was pretty much standing out down the runway on takeoff. When you were perpendicular to the runway during taxi, that same wind was pushing on the vertical stabilizer pushing the tail left and the nose right. Hence why you were having trouble keeping it straight during the taxi. Thanks again for all your content.
