I swear when ppl like this improvise it sounds better than actual finished products on yt and spotify.
It’s probably because at the end of the day humans are generally better at creating rhythm and tempo that’s pleasing to our ears than computer programs can. The little imperfections of human performance oddly add a more favorable touch for most people. At least that’s my hypothesis
