      I've slowly started to come down on the avb levels since I started. I have a blackberry wine that went to 20.4% (unintendedly 4 pounds instead of 4 cups of sugar). These days 13% - 16% avb is what I shoot for.

    I'm going to make Dragons Blood wine next month using dark frozen cherrys. This video shows how dark the wine might look by Halloween . Also mixing in Black Grapes and Dragon Fruit. But yeah....thanks for giving us a look at this wine texture. 🍷

    Another very entertaining video. Just a thought, though: unless you are harvesting fruit yourself store bought fresh fruit is typically picked (at least for sale upstate NY) before it is fully ripe. frozen fruit, however, is almost certainly picked at the peak of ripeness AND you get the added advantage of the ice crystals that form inside the fruit cutting the juice holding cells and so resulting in you, the winemaker, having much easier access to more of the juice.

    Do you count the months after making the wine or after bottling? I'm excited because I'm about to bottle this recipe today.

      I do count the months. In my subsequent videos I show the labeling of the carboys with what I'm making, what the starting date was, and the starting gravity.

    What do you think about adding vanilla bean to the must? I’ve been kicking that idea around for a cherry wine. Absolute beginner here

    If it is that good I would do a 5 gallon batch and buy a bigger carboy.

      Storage space limitations won't allow for larger batches of wine.
