i’ve never worked with aftereffects, some people may also find it simple to keep it all in one app

When I do things like this, I work on the logo with Illustrator, then I import all the layers I need into AE, and from there the speed and efficiency at which you can animate something like this depends mainly on the techniques and tools you use.
Some projects/assets are easier to create/animate by hand like in this video, others are better done by the automation and tools that AE and other softwares provide. You'll get a feel for it the more projects you work on.
