My mom and dad are from Mola Di Bari. . How far is your town from us.
I Just want to say thank you for taking the time to make this video.
My mom died of cancer in 2003. I never really got a chance to learn other family's dishes. And what a blessing it's been finding your videos thank you.

His recipes are 99% the way we cooked them when I was growing up. The 1% difference is all personal taste. He shows that Italian food is really not that hard to make. You have to develop taste. That takes time and experimenting. I eat most of my experiments. This guy is the real deal. So glad he shares his many years of cooking. When folks like him are no longer with us, we now have his teachings.

I love this dish. My Mother made this with a few anchovies, sometimes with toasted bread crumbs. I make it the same in her Memory. You don’t taste the anchovy and I like fresh Italian parsley.

I grew up on Agio e Olio. It's still one of my favorite dishes. We put chopped parsley in ours . I am going to try basilico the next time. Yes, I would like to see you do this with anchovies.

I will add basil next time. Aglio e Olio is a family favorite comfort dish, especially when anchovies are added! Its easy and so delicious. Melt several anchovie fillets in the oil before adding the garlic. Continue with the cooking recipe.

What is a good brand other than the large quantities bottles I buy from Costco for everyday cooking. I would think for this type of recipe I would want a better flavored one.

I practically grew up with this recipe. When you get down to it it's just good olive oil, lots of garlic, some hot peppers and parmigiano reggiano. For a little bit of a change you can add some fresh tomatoes and lots of parley or fresh basil but only at the very end.
