I grew up in MetroManila and never really appreciated much of those street food, as we had them so often. Looking back now, I realise how rich Filipino food culture is, with it's mix of Chinese, Malay, Spanish, American, Mexican, etc. Thanks for reminding me mate.

When you were in Singapore, you went to Chinatown complex market hawker centre on 2nd floor there 2 famous stall selling this POPIAH, it’s actually a HOKKIEN OR PERANAKAN NONYA ORIGINS…with history from Fujian China, when Chinese emigrated to Penang and Malacca, later some emigrated here, introduced to Singapore from 1800 to 1950’s, Later was reintroduced into Singapore Hawker Centres in the 70’s. POPIAH is pretty famous or popular stapled in Singapore And Malacca or Penang Malaysia but you missed it . This roll - flat thin pancake is make of flour batter, wrapped fillings : are dry fresh bean sprout, fresh lettuce or fresh Chinese celery, chopped ground peanut, cooked shredded turnips with shredded carrot and small dried shrimps, cooked fresh medium prawns, fried omelette, chopped fresh garlic, fried bean curd cut into small cubes, grinded chillies and black sweet sauce. Ohh you missed TOHO restaurant in Binondo, the oldest resto in the Philippines. Famous Philippine historical figures dined there. The resto is still very much the same. It has modern branches in the metro, but the main in Binondo preserved it's old simple canteen style vibe.
You just walked by one of the famous restaurants in Binondo. It’s on the same alley as New Po Heng Lumpia. Quik Snack is well known for their sate noodles. Their lumpia is also good and the kuchay ah. It’s a baked pastry filled with meat & veggies with a little bit of sauce.
There are many kinds of Lumpia in the Philippines. Lumpiang Shanghai - Fried Spring Rolls with ground pork fillings. Lumpiang Toge - Fried Spring Rolls with Vegetable Fillings but the main ingredient is Toge (Sprout beans) Dyanamite - another variant of Fried Spring Rolls with large Green chili as main ingredient with melted Cheese sometimes ground pork is added. Lumpiang Sariwa/Lumpiang Ubod - Fresh Spring Rolls topped with sweet garlic syrup.
Dong Bei Dumplings - dong bei means North Eastern China, essentially places like Hei Long Jiang, Harbin that area. Other than rice and fried rice and noodles, dumplings are like another staple. You're really kind to the starving people. May God bless you.
