A Simple Persian Dinner |STEAMED RICE AND VERMICELLI, LAMB AND WHITE BEANS STEW & TWO SIDE DISHES

    Today, I am cooking a simple, budget-friendly, and delicious Persian dinner. It is cooked with ingredients available at any British supermarket. As any traditional cuisine around the world, Persian cuisine is a labour of love. In this episode, I am cooking a very ordinary dinner that is normally served for a midweek dinner.

    Here are the recipes:
    (Serves 5)
    LAMB AND WHITE BEANS STEW
    Ingredients:
    • 500 g lamb, chopped
    • 1 cup of dried white beans
    • 2 onions, roughly chopped
    • 1 pepper, roughly chopped
    • 4 cloves of garlic
    • 2 tbsp tomato puree
    • 2 bay leaves
    • 1 tsp turmeric
    • 1 tsp salt
    • 1 tsp chili flakes
    • Juice of half a lemon
    Soak the white beans in cold water for 12 hours.
    Heat a tablespoon of oil in a large pan and fry the chopped lamb until browned on all sides. Add the chopped onions and pepper, tomato puree and spices. Toss well together and add the drained beans. Add 4 cups of boiling water, bring the stew to boil, then lower the heat and simmer for 1.5 hours or until the meat and beans are cooked. Add salt and lemon juice, check the seasoning and simmer for further half an hour.
    Serve with steamed rice, couscous, or bread.
    STEAMED RICE AND VERMICELLI
    Ingredients:
    • 1 and 1/5 cup rice
    • 1/5 cup broken vermicelli
    • 2 tsp salt
    • 2 tbsp oil
    • 3 cups of water
    Heat 2 tbsp of oil in a shallow casserole pan. Add the broken vermicelli and fry them until they are golden but not too dark in colour. Add the rice, 3 cups of boiling water, and 2 tsp salt to the pan. Stir well. Bring to boil, cover the casserole, and simmer on low heat for 15 minutes or until the water is absorbed. Wrap the casserole lid in a clean tea towel and put it back on the casserole to keep the steam in the pan. Let the rice steam on a very low heat for 10 minutes.
    Serve with your choice of stew or curry.
    SHIRAZI SALAD
    Ingredients:
    • 6 baby cucumbers
    • 2 tomatoes
    • Half a small red onion
    • 2 tsp dried mint
    • Juice of a lemon
    • 2 tbsp olive oil
    • Salt and black pepper
    Finely chop the cucumbers, tomatoes, and red onion. Add the mint, lemon juice, olive oil and season well. Toss them well together. Your Shirazi salad is ready.
    YOGURT AND SPINACH DIP
    Ingredients:
    • 50 g baby spinach
    • 500 g Greek yogurt
    • Handful of walnuts
    • 2 tbsp fried onion
    • Salt and pepper
    Roughly chop washed spinach leaves and wilt in a frying pan. Set aside in a bowl to cool down. When the spinach is cold, add chopped walnut, yogurt, and fried onion, and mix well. Season well with salt and black pepper. Garnish with fried onion and walnuts.

    Dear lady, I couldn’t follow all the ingredients you were using. For example what was the yellow crunchy topping on the spinach dip?

      Sorry for that.
      It is crunchy fried onion that I bought from Tesco. It is available in IKEA as well. Sorry that my recipe wasn’t very clear and thank you for mentioning that.
      If you can’t find the crunchy fried onion, just chop some onion finely and caramelised them in hot oil and add that to the dip.
