Hello new viewer, I was a school cook for many years and thought to share how I cooked bulk meat, was wonderful and saved me so much time. I put 40 pounds of ground beef in pans 4” deep x 12”wide x 20” long , seasoned and roasted in oven. With your beautiful new ovens 4 pans would fit nicely. Then when meat is cooked can break up gently in large mixer being careful not to over mix. This was quite a fast method for chili, spaghetti or casseroles. Cooking in bulk is a skill like you loved it. You are such a natural at what you do enjoy checking in now that I found you. Sweet blessings Carol

my frozen meals have come in handy over the past week. my husband had an accident at work and was able to walk with crutches to do his necessities. I took care of him, the child, the house, men's tasks. I had to lift everything for him, carry, put on socks. In addition, the nearest shop is 15 kilometers away and I don't have a driving license. So it's always a good idea to have meals in the freezer.
He finally stopped making fun of me for cooking like there was going to be a war

Hi Jamerrill. Google says to put a thick coating of baking soda on your carpet. It will need to sit for 3 to 6 hours until a crust forms on the outside edges. Then vacuum the rug. I have never had cause to try this but thought I would pass it on. God bless.

I wish my sweet mother-in-law had had this large gorgeous kitchen with her family of eleven kids, plus her and dad! She did her best in a small one with just the four burner stove. Thought I would mention my experience of canning raw pack versus cooked meat with my All American. I have found that the raw pack method works best for us because if your using small cuts of meat (stew size pieces), the raw pack process doesn’t overcook the meat, leaving a great texture. Just two cents ;-)

I got an All American canner last year.
I can't say enough good things about it.
It takes much of the quests work out of canning. I do a lot of meat. I want to have canned protein on the shelf, in the event of some unexpected catastrophe, that could be easily heated for consumption. I've done chicken, found beef, sausage, beef and pork. It brings peace of mind knowing that we are covered with a well stocked pantry.
Another benefit of canning meat is not losing it in the event of power loss. I will lose hundreds of pounds of food in a short amount of time should that happen. Canning meat insures it's longevity.
Like you say " Yes and Amen".

I just bought my first pressure canner, a 23 qt after all there are only two of us. I can't wait to can ground beef, make bone broth, etc. Leisa at Suttons Daze channel just did her annual Canuary play list and I am inspired.

    • @lynhanna917
      @lynhanna917 Рік тому +4

Try canning just a little ground beef first..i just cant handle the texture. It was just mushy. The beef stew meat was much nicer texture wise. If i make a big batch of soup i pressure can it at supper time and by the time the kitchen is cleaned the canner is done. If you leave the canner cooling too long and you cant get the lid off do not panic. Just turn the heat back on and it will only take a few minutes for the pressure to pop the seal and you can easily get lid off.

We love sloppy joes too! Sometimes (to mix things up a little), I will make sloppy joes tater tot casserole, and it makes a great freezer meal too. You just take your sloppy joes meat mixture and put on the bottom of a pan, add a little shredded cheddar and top with tater tots. I bake it until it’s heated through and the tots are crispy. This is actually one of my favorites 😊

I love my All-American. I have the 921 and doublestack pints easily. There are only 2 of us, and pints make more sense for us. There is definitely a learning curve. I have noticed recently with all the different brands available for jars, they are all slightly different shapes (round vs square-ish) and heights.

I just have a habit of starting something too late in the evening and just cannot go to bed with it unfinished. Three o'clock yesterday and the day before was also late at 3.45am. Like you there is no sleep ins either. Best jam recipe ever! Bagels and cream cheese are waiting for this.
    Carrot Cake Jam
1 can (20 ozs) unsweetened crushed pineapple, undrained
    1 1/2 cups shredded carrots
1 1/2 cups of peeled chopped ripe pears (fresh not canned)
3 tablespoons commercial lemon juice (acidity of commercial is consistent
    1 teaspoon cinnamon
    1/4 teaspoon cloves
    1/4 teaspoon nutmeg
    1 package powdered fruit pectin
    6 1/2 cups of sugar
In large saucepan combine everything except the pectin and sugar. Bring to a boil, reduce heat and simmer for 15 - 20 minutes OR until pears are tender, stir occasionally. Remove from heat (at this point the neighbors think you are making carrot cake). Stir in the pectin.
Bring up to a full rolling boil over high heat , stirring CONSTANTLY. A full rolling boil is when you can't stir the boiling down. Boil and stir for 1 full minute. Remove from heat, skim off any foam you can get (foam will crystallize in the jars. A little won't hurt anything.) Or, you can add a tad or teaspoon of butter to the mixture before you boil it. This recipe doesn't really create a lot of foam though.
Ladle hot mixture in hot jars just washed in the dishwasher and on a heat dry cycle. Leave 1/4 inch headspace. Run a plastic knife down the sides of the jars releasing air bubbles (metal in a hot jar not a good thing, easier to break the jars). With a damp rag wipe the rims and put on lids and rings (if using Tattler lids remember to tighten and untighten by 1/4 turn per manufacturer’s instructions). Process in a water bath canner for 5 minutes. Please check the canning process time charts for your altitude. I'm at 4,000 and must process for 10 minutes.

I have had an All American for 30 years. The trick is to loosen the wing nuts so you can get them on then tighten opposite wing nuts like you would the lug nuts oon a tire when you put it on the car. I have a jar of Vaseline that is dedicated to my canner. Canning is a full day project. Try canning poultry, both turkeys and chicken I do a lot of that, because it is inexpensive protein for my family. If you buy the larger turkeys 18-20 # you will get more white meat in breast meat, like 6 quarts per turkey breast meat.

So glad you didn't get discouraged. Pretty soon you will have that lid figured out and putting it on like a pro.

I'm using a vintage AA from the 1940s and it's still going strong! It belonged to my grandmother. Maybe some day your grandbabies will be using yours! As for getting the lid on I think it's easier to get all the wing nuts up first before tightening any.

Yes they are all the same. In regards to the wing nuts you can unscrew the wing nuts slightly to get them up over the top. Using the debugger to make sure the top is even is a good idea.

You probably already know you can loosen the wing nuts by turning them counter-clock-wise. Then it gives you the slack to pull the wing nut into place. Then you can tightened them as you did. Great job!

Stew meat is the BEST canned. I even pull out roasts we haven't eaten. With only two at home now, the huge meals are in our past, but we love the stew meat .....gravy it up, over rice..... This is some REALLY fast food. I par bake/roast my meat first in the oven . Great results.

Ok. I apologize for being so stupid. But I didn’t know that you could can meat! Yes, I understand the stuff at the grocery store and what not, but I didn’t know you could do it at home. I thought canning at home was for fruits and vegetables, definitely NOT meat! I’m blown away! I learn something new all the time from you, Jamerrill!!!

this brought back memories of some late night canning or cooking for me as well. So loved this video. the truth, the whole truth, and nothing but the truth. In this case how things can just turn out on a normal day of doing and it just does not all work out the way it usually does. I am not alone thank jesus 🤗. I adore you, hugs.

We LOVE our All American!! We actually struggle to fill it most of the time as our kitchen is not as large or as fully equipped as yours! My favorite thing We have canned was our venison stew meat! Just venison cut into chunks and raw packed. It is so tender and is and instant stew, roast venison gravy, sandwich, etc. I know that beef done the same way would be fantastic!
