Deviation is basically a departure from the standard norms of language whereas levels of stylistic analysis simply state different levels at which deviation can be found.

How to differentiate between stylistics and literary criticism?

Literary Criticism deals with philosophy of a text that whether a text is moral or immoral for readers, useful or useless, or its impacts on the reader. On the other hand, Stylistics deals with only structure of the text like poetic device, sentence structure, writers style and his choice of words etc.
